Almond crusted peach cobbler

One of my favorite summer time dessert is warm peach cobbler with vanilla ice cream. Hubby and I both love to scoop out  warm and gooey cobbler as the ice cream melts over it.Yummm…

A year ago,we made some  change in our pantry.I removed all purpose flour.We started using coconut sugar or other un-processed sugar more,small changes here and there.I am not a baker but when i do bake,i struggled even more after this change.

I have tried peach cobbler with whole wheat white and pastry flour.It wad barely edible to me.I didn’t like the texture even after couple of trials.I was not willing to bring AP back to home,so i started looking beyond the regular flour.It was time to experiment with Almond flour.Glad i did.

  • Almond flour does not give smooth texture which AP flour gives to the cobbler.However i like the nuttiness of almond and its texture didn’t bother me like whole wheat.
  • Why it is called cobbler?I have some idea after watching PW ,As you tear the dough into pieces and layer the top of the peaches,it looks like ‘cobbled’ ,PW says 🙂
  • I like my peaches fairly soft,i do not like a bite.So i baked the peaches enough before i add dough.

Peach cobbler should not be eaten just by itself.It should be served warm with heaping spoon of Vanilla ice cream,just my opinion 🙂

I adapted from this recipe.

Almond crusted peach cobbler

Ingredients

  1. 7-8 fresh peaches,diced,pit removed.
  2. 1/4 teaspoon lemon juice
  3. 1 tablespoon honey
  4. 2 teaspoons cornstarch
  5. 1/2 teaspoon cinnamon
  6. sprinkle of nutmeg
  7. Top crust(cobble)
  8. 1-1/4 cup almond meal
  9. 2 teaspoon baking powder
  10. 4 tablespoon butter diced
  11. 1 tablespoon honey

Instructions

  1. Preheat oven to 400F.
  2. In a 8 by 8 baking dish,add peaches and lemon juice, cornstarch, honey, cinnamon, nutmeg to it.
  3. Bake it for 10 mins.
  4. If you think the fruit is mushy enough,take it out.I lowered the temp to 375F,covered it and baked for another 12 mins.
  5. In a bowl, mix the top crust ingredients.
  6. Using your hand or small spoon,tear the dough and add it to the top of the baked peaches.
  7. Bake for 20-25 min,until it is bubbly.
  8. Enjoy it warm with your favorite icecream 🙂

  1. I loved this recipe and so did my kids and best of all, it’s so much healthier than the traditional cobbler. I used a mix of peaches and apples and a bit of xylitol for sweetness, instead of honey. So good! The cobbler topping crust did brown a little too much (almost burned) at the end. I didn’t know whether to cover or not (directions do not specify). I would either cover it or not bake for as long. Just watch to see how much it browns.

    • Ania,Thank you for trying out the recipe.I am so glad you liked it. Xylitol is great sub.I usually keep an eye on it to prevent over browning.I did not cover it for sure(I try not to open the oven in the middle) .You can also bake at lower 375 temp.Sometime actual oven temp varies across.
