Apple Cider donut holes
Do you know sep 26 was Johnny Appleseed birthday ?
September is a month of birthdays in our extended family.So really I would have missed Johnny Appleseed birthday very easily, had it not been for all the apple learning and tasting that was going on at our school that week . My daughter’s class made apple pancake, learnt about making apple juice and apple sauce , not to mention apple art !
I came across apple cider donuts holes , blame it on all the talk of Facebook town 🙂 I drooled looking at the images of the darling donut holes, my friend Melissa made.So it was time for us to whip us some of our own .
I followed the recipe here with minor adjustments.I used whole wheat pastry flour.Also,I used evaporated cane juice sugar instead of brown sugar and i left apple butter, i was out of it..
Verdict?
This is what i would say about my donut holes with adjustments.
- It is wheat-y,subtle 🙂
- Not as fluffy as the AP flour would have been as expected,i assume..Regardless, we didn’t mind it at all !
- Mine were not well rounded spheres,it looked muffin shape.
- I ended up using much more butter and sugar to coat the donut holes then the originally recipe calls for.I did it incrementally.Not sure,if i missed something.
Since,It was devoured by our kids and adults alike,in less then 24 hr, so I would say it’s a keeper for us !
Ingredients
- 2 cups Whole Wheat Pastry flour
- 1 1/2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2 teaspoons cinnamon
- 1 large egg
- 2/3 cup light sugar(evaporated cane juice)
- 1 tsp. vanilla bean paste
- 1/3 cup honey
- 1/3 cup apple cider
- 1/3 cup plain yogurt
- 2 Tbsp. vegetable oil(I use grapeseed)
- butter as needed starting from 2 Tablespoon
- sugar as needed,starting from 1/4 cUp
- cinnamon starting from 1 tsp
Instructions
- Preheat oven to 400F.
- In a small bowl,mix all the dry ingredients.
- In a big bowl,whisk the wet ingredients.
- Add the dry mix to wet.Stir and mix it well.
- Spray the mini muffin tins.
- Scoop out the batter using mini icecream scoop/spoon/hand.
- Bake for 8-10 mins.
- Let it cool a bit.
- Melt butter in a bowl.
- In a separate bowl,mix sugar and cinnamon.
- Roll the cool down donut holes in butter(shake excess off).
- Roll it back in cinnamon - sugar mixture
- Enjoy one at a time !
