Chocolate Chip Walnut cookies

What comes in your imagery,if i ask you about chocolate chip cookies? I think of soft and chewy cookie.Some might say crunchy. Chocolate chip cookies are quintessential American dessert and yes we do like the Nestle Toll house chocolate-chip cookies.But what prevents me from making it often  is the amount of sugar and butter that  goes in this yummilicous dessert and what makes it even more sinful is our lack of control in eating it.We don’t just stop after one,we keep eating it.Are you like us?I hope not. So i was thrilled to try this recipe for chocolate chip cookies.Why i like ..NO…i LOVE this recipe ? It uses Oat flour,instead of wheat.I am all for whole wheat but i do prefer Oat over any kind of Wheat if you ask me,particularly in cookies. I don’t keep oat flour in hand.I just ground the old fashioned oats in spice grinder to make the flour.Yes i did run the spice grinder with rice,bread and baking soda to get the smell of spices out...

Today’s lunch is the result of what i can think of packing in quick minutes.So here is the lunch for my boy. *Jelly sandwiches ,pressed on Empanada maker,with two eyes upside down monster Baked whole wheat pumpkin donut holes.-We loved my new pumpkin experiment yesterday and both of my kids requested that i must pack them today for the lunch 🙂 fruit cups crackers I probably have tipped the scale on sweet side on this one,will be making it up for next time ! My friend,Tamara,brought me the empanada maker from Ecuador.I did not use it for long time and then i had a epiphany,hey i can use that to  seal the sandwiches and it is terrific.Now i need to make empanada for real...

Yesterday my sweet friend Jessica visited us.We have playdated since our kids were wee little.By that i mean,when they slept in their car seats during playdates.Yeah,now you are thinking if it was a playdate or mommydate  :-). Since we moved out from the city,we don’t see each other as often.So you would guess that it took us only five times of rescheduling and couple of months that the day finally arrived.I kept it complete surprise from my kiddos.Its more fun that way ! We took advantage of it.Girls  and a little boy played and rode and climbed the trees while moms chatted outside 🙂 It is fall in Texas, as good as fall can be here.So I am in ‘pumpkin’ mood.Let me tell you something,pumpkin as i know it in US, is new thing to me.I had a very hard time explaining to my family in India,what Americans mean by Pumpkin.What we called ‘pumpkin’ in India is called ‘Opo Squash‘ here.So this is for you my family in India....

Yesterday we tried a new Italian restaurant in town after the church.As soon as we arrived,we were served bread with herb dipping oil.I absolutely love this welcome treat at some of the Italian restaurants.I can totally just eat bread and nothing else. So this afternoon,I was in a mood for bread baking.I decided on Focaccia,here is why? Its  EASY,very important point. I was going to make it using whole wheat flour .My past experiences with whole wheat bread baking have not exactly been tremendous success. Focaccia is a flat ,chewy bread.So it was a good candidate for whole wheat,which tends to make bread dense anyway. I was pleasantly surprised with the result.Both of my kids loved it and asked to pack it for next morning lunch 🙂 I adapted this recipe and kept it simple . We have been busy lately with field trip,country fair and of course learning new popcorn words and sounds and science and what not.So,I have been slacking in bento department lately.This is what i packed for my girl for tomorrow.
