Bay Fish with Cilantro sauce

So it was one of those evening,where my desire to spend time in the kitchen was not all time high.Verdict rested at Fish,since it takes less time.I decided single handed since jury was busy at work and play and decision could not have been waited.

We can’t get fish here,fresh from the water right away,like my Dad brought it for us growing up and cleaned it himself.I don’t think i can handle the later part.So i got it as fresh as possibly available in our supermarket and froze it for later.Irony !

There is not much of the recipe going on here for the fish itself.I served it on the bed of Green Bean rice with green Cilantro sauce .Green sauce is very similar to Argentinian Chimichurri sauce.Starking difference is, Chimichurri Sauce has Parsley as the choice of green and is swimming in Olive oil.I have Cilantro leaves in  hand most often then Parsely and we like it that way in our house. It goes well with grilled meat too.I didn’t add chili to it at all but you can make it spicier.

I know that  my husband likes the seasoned fish with this green sauce but my kids didn’t really care for the fish until yesterday.They both could not get enough of fish and loved dipping in the sauce.Encouraging for mom.Bay seasoning is great for seafood,i must add.

Bay Fish with Cilantro sauce

Ingredients

    Bay Fish
  1. 3 Tilapia Fillet,thawed if frozen
  2. Bay Seasoning
  3. Oil
  4. Sauce
  5. 3/4 - 1 cup of cilantro leaves
  6. 1 teaspoon dry Mexican Oregano
  7. 3 teaspoons red wine vinegar
  8. 1 small garlic cloves
  9. 4 - 5 Tablespoons Olive oil
  10. Salt to Taste
  11. Green Chili (optional)

Instructions

  1. Season the fish with Bay seasoning on both sides and press it down with your palm,so seasoning goes deeper.
  2. In a pan,add a tablespoon of oil,add fish.Don't crowd the pan.
  3. Cook it for couple of minute.
  4. When you see it is getting white at the bottom and fish is curling up little at the bottom,it is time to flip.It takes may be 3-5 mins on each side.
  5. Take it out and set it in platter.
  6. For Sauce
  7. Blend all the sauce ingredients.Drizzle the fish with sauce as you eat.

I was going to serve the fish with rice and the side of green beans and tomatoes.In the last minute,i decide,why not just mix it all and keep it easy.So here it is.

Green Bean Rice

Ingredients

  1. 1 1/2 cup cooked long grain rice
  2. 3/4 cup of frozen french cut green beans
  3. 1/2 cup chopped Onion
  4. 4-5 cherry tomatos sliced
  5. Salt to taste
  6. Oil

Instructions

  1. Add oil in the same pan,fish is cooked.
  2. Once hot add onions and cook it until translucent.
  3. Add Green Beans to it.Once cooked,add tomatoes.
  4. Stir it all.Add rice.Season with salt.
  5. Serve as bed for the fish.
