Black Bean Chicken Burrito

‘Burrito’ is popular Tex-Mex dish,though for reason unknown,I just don’t think of it very often.I had leftover Thai roasted chicken from night before.Next day i happen to go to grocery store(which happens more frequently than I would like it to be) and walking through the bread aisle,I just kept looking at different kind of tortillas they had.And then the epiphany,I thought that is perfect,I can just make some ‘Burrito’ for dinner,relatively easier to put together.

Tortillas come in different flavors here and I wanted tomatoes or spinach and they had neither,so i got a packet of Garlic Herb Tortilla.Also tortilla used to make Burrito is larger(approx 10″) then the regular tortilla(approx 6″).Now you ask what is all about this mexican cuisine?Let me start off by saying it is a ‘sumptuous meal wrapped in a tortilla’.It has rice(carbs),meat(protein),beans(protein),sauce,cheese all ‘bundled’ in one,rolled and closed at both ends and now you know why the tortilla used for burrito is larger than regular.It needs more room to roll and close it from both ends,like egg rolls.

This is how i put it together,i wasn’t really measuring anything.So everything is approx.

Black Bean Chicken Burrito


  1. 1 cup medium grain rice cooked
  2. Fiesta Lime seasoning blend
  3. Oil
  4. 2 cup water
  5. Tomatillo Sauce
  6. Chicken
  7. 1 -1/2 cup cooked chicken
  8. 1/2 medium onion chopped
  9. 1/2 stalk celery chopped
  10. 1 can choppped tomato(1/2 for chicken,1/2 for beans)
  11. Beans
  12. 1 (14 Oz) can Black Beans


  1. In a pan,add onion,celary to hot oil.
  2. Stir it for couple of mintues
  3. Add chicken,tomatoes,seasoning and salt to taste.
  4. Add 1 cup of water.
  5. Cook it until everything is mixed and blended about 20-25 mins.
  6. Beans
  7. Simmer the beans in tomotoes,seasoning blend and 1 cup of water for for 20-25 minutes.
  8. Assembly
  9. Lay the Tortilla flat.
  10. Add a layer of cooked rice.
  11. Top it with beans.
  12. Add cooked chicken.
  13. Top it with tomatillo sauce and cheese.
  14. Roll it and tuck the both ends.
  15. Microwave it,to melt the cheese and warm the tortilla.It can be done in skillet too.

This is how you say it :

Burrito – B-urr-i-to(Where ‘t’ is like ‘Tumlog’ in Hindi)

Tomatillo-Toe-ma-tio(“L’ tends to be silent in Spanish,as i am noticing a trend in many dishes)

Tortilla- (Tor-tia (“L” is silent.It is basically Indian ‘Roti’)

Yummy Notes:

  • I used black beans,which is precooked comes in a can.Of course you can cook your beans for hours and use.Also different kind of beans,pinto beans, are another very popular Mexican beans.
  • I prefer medium to short grain rice for Spanish/Mexican dish.They  plump up as they cook and not as slander and thin as Basmati rice,texture which i like in Spanish cuisine.
  • Beans and rice can be spruced up too with spices etc,i kept it simple and let Chicken and Sauce shine over and make it complete.
