What can you do with leftover rice?

I have filled them up in burritoused them in casserole dishes,have thickend the soup with them.If it is plain,then of course,you are limited only by your imagination.Best,if you can’t think of anything at that moment,then freeze them until you can figure out(just don’t take eternity !).

One thing i had not played with yet was  rice ball.Not a new concept.Italian has baked arancini, Brazilian have fried ‘Bolinhos de Arroz’, Japanese have assembled ‘Onigiri’..different filling,different method and not necessarily made with leftover rice…common theme is shape and yumminess.

We made Brown Fried Rice couple of days ago and we had leftover..and yes you guessed,i wanted to try Yummy Rice Balls this time.

Brown Rice balls


  1. 1-1/2 cup Brown Fried Rice
  2. 1/2 cup shredded Cheddar cheese
  3. 1 egg
  4. Panko bread crumbs


  1. In a bowl,mix brown fried rice,cheese and egg.
  2. Make rice ball.
  3. Dust each ball in panko bread crumbs.
  4. Set it in refrigerator for 10 mins.It helps holding the shape while cooking.
  5. In a pan,heat 2-3 table spoon of oil.
  6. Add the refreigereted rice ball.
  7. Let it crisp up each side for couple of minutes.
  8. If you try to flip it and it is sticking,it means it is not ready to flipped up or oil is not enough.
  9. Serve warm with chutney,ketchup.


You can mush the rice with potato masher-spoon to make smooth ball. Small cookie-ice cream scoop can be used to shape the ball. Wet your hand frequently to make smooth shape.
