What do you do with farm fresh eggs? My friend Suzy shared with us some farm fresh beauties.Anything farm fresh makes me very happy.I would go extra mile for it and create my menu around it.I wanted to  try so many things with the dozen. I settled on Shakshuka. It has  a winning taste combination of onion and red bell in my book. Shakshuka is very popular middle eastern breakfast.Different region have slight variation to it.Core idea remains the same.Egg is cooked on top of the onion,bell pepper,tomatoes medley. I told my kids that this dish is  middle eastern.Abby asked, are they still battling in middle east? She remembered it from our last middle east inspired meal.So we collectively prayed over the region. I will not go into the gory details of atrocities going on this  very volatile region.If you keep up with the news,you know precisely what is happening there.Please pray for the change in heart for those persecuting.Safety and rescue for those being persecuted .This part of the world needs our...

What do you do with leftover roasted chicken? Tacos, enchilada, Chalupas, Taco bowl, Casserole, burritos are some of my go to routine with leftover chicken. I remembered the taste of Chilaquilles  at my friend’s home.  I had tried making it once before in short cut way. So I tried to do it again, this time going all out way. Chilaquilles (Chila-Kee-les).It’s a mouthful to say, Isn’t it?   What I know about ‘Chilaquiles’ It is  very popular breakfast in Mexico, using day old  leftover tortilla. Fried tortilla chips are smothered in freshly made salsa. Served with Fried eggs, crumbly queso fresco and Mexican Crema on top. My husband is not a fan of eggs with tortilla in any form. You can leave the eggs out completely.I stayed with meal version for our dinner. I hardly ever fry things. So I had trial short cut run before with tortilla chips. Do you know sep 26 was Johnny Appleseed birthday ? September is a month of birthdays in our extended family.So really I would have missed Johnny Appleseed birthday very easily, had it not been for all the apple learning and tasting that was going on at our school that week . My daughter’s class made apple pancake, learnt about making apple juice and apple sauce , not to mention apple art ! I came across apple cider donuts holes , blame it on all the talk of Facebook town 🙂 I drooled looking at the images of the darling donut holes, my friend Melissa made.So it was time for us to whip us some of our own .  I followed the recipe here  with minor adjustments.I used whole wheat pastry flour.Also,I used evaporated cane juice sugar instead of brown sugar and i left apple butter, i was out of it.. Many times,when recipe calls for egg yolks,i am left with egg whites.I don’t feel like throwing it away.So i turn them into quesadilla using other leftovers, for breakfast. Egg whites can be pretty bland in itself.I personally like my eggs with all its  golden glory.So what do you do if you are left with just the egg whites? I added some greens and some veggies  to it.Rolled it in egg whites. Cut it like Quesedilla  and served it with leftover relish. One thing,you must not overcook the eggwhites and you must eat it hot.It gets chewy if it cooks and sits longer. It is also a great no-carb alternative. What is your kids favorite snack? We have a long list and one in that list is Applesauce.Both of my kids love applesauce.In fact,this particular applesauce went by so fast,it was surprising to me 🙂 I often make applesauce at home.Quite effortless i may add. This time,i decided to  try my friend Melissa‘s applesauce recipe.I usually make it plain.So it was bit of a change to try her fragrant applesauce recipe 🙂 How to make it? You can peel and core the apple before you set it to cook.If you do this,you will have beautiful mess in your kitchen.Apple ribbons anyone? Or You can leave the peel on like me,because one,I don’t own a apple peeler,two,i am lazy and three,the most important one, i can fully justify that eating extra fiber does not hurt.If you are leaving the peel on,,i would suggest to use organic apples,well washed. What did you have for breakfast this morning? I had quinoa granola parfait 🙂 This past saturday,i whipped up a batch of granola after much procrastination.I had quinoa (kee-n-wah) sitting in my pantry and i wanted to include that.I whipped up batch taking inspiration from twopeasandtheirpod .  Quinoa is superfood,very old to civilaztion.It looks like bird seeds,doesn’t it? Granola is basically a mixture of some healthy grains ,nuts and sweetener(if you like ) of your choice.It could be made as clusters,bar or just handful of mix. I had oats and quinoa as main grain ingredients. Used honey as sweetner. Nut wise,i used raw pumpkin seeds,walnuts and blanched almonds.You can add nuts of your choice. Usually granola tend to have resins,dry cranberries,dry fruits like that.I am not a fan of chewing on it,so i left it out.You shouldn’t) How do i like to eat granola?
