Chicken Stir fry with Black Bean Sauce

My husband and I are big on Chinese food.Growing up,i had Indo Chinese dishes.I still think think they are best.So now that we have moved out from the city,we don’t let the opportunity for good Chinese food pass by easily.There is a ‘Hunan’ Chinese restaurant in a city,called ‘Mencius’ and i love love their Chicken in Black Bean Sauce.First time i ordered this dish because i couldn’t find the type of noodle dish i was looking for, in their menu.Pleasantly,it did not disappoint me.Since then i have tried time and again to replicate this dish at home and i am never successful.When i make/order Chinese dishes,it has to  appeal to me color and texture wise, more then any other kind of dish. One thing i have learnt about chinese cooking is,since it uses such combination of hot,sour,sweet and spicy all at the same time,getting the proportion of each kind of ingredient is crucial.Little imbalance in tartness vs nuttiness can ruin the whole dish.So i still have ways to go to nail down the...

‘Chicken Pakoda’ with a twist or Chicken Patties as you can call it.Spring is here and i wanted something light and easy for the dinner.So looking into my freezer,i noticed Ground chicken.I have used ground chicken in different ways and forms as Ragu ,meatballs,logs.So this time i wanted to change it up a little and thought to make Pakoda out of it. Well,’Pakoda’ are Indian snacks,usually made with finally chopped vegetables,mixed with spices,bound together with lentil flour and fried in hot oil,served with evening tea.So i applied the same concepts with chicken but left the lentil flour out from the equation.Why?Because chicken sticks together unlike veggies,which needs something extra to hold them together.Also i didn’t fry them just cooked them slowly in little oil,at home that’s how my mom made  ‘pakodi most of the times .Depending on the size of the ‘Patties’,it is called differently.Small patties are called ‘Pakodi’ and big patties are called ‘Pakoda’.Ok enough talking,so let me tell you how i made it. Here in South Texas,winter has totally different meaning.Yes when temp is in mid 40F- 50F,it is winter.If it is coupled with rain,you can  bet it slows down the life,at least for me.Yes that’s cold here.On such cold and wet evening,spooning the steaming hot ‘chili’  along with cornbread brings the warmth.Slowly cooked beef with spices,all well mingled together,served with cornbread ,is traditional fare .I customized it to fit our taste.So I settled on chicken stew. I was gonna name it just the ‘Chicken Stew’ but I changed my mind after the dinner.Both of my kids,almost 3 and 5 couldn’t get enough of it.Yes it was the first time miracle at the dinner table that they asked the number of serving for something which I totally didn’t expect to.Especially my daughter.It is spicy chicken stew without heat, which certainly won’t be qualified as kids favored meal but I guess both of mine have developed palate for spices. I thought of this meal as easy way out for dinner,the night i wasn’t much in a mood for cooking.Good thing is,even though i am not crazy about this dish,(I am not much of Pasta and Creamy sauce person),my husband and kids LOVE this dish.Winner for a mom. Baked Chicken Alfredo #ratingval# from #reviews# reviews Print Ingredients 1-1.5 cup leftover boiled chicken in bite size pieces 15Oz jar Garlic Alfredo Sauce 1/4 cup parmesan cheese(Optional) 2 cups Macroni Pasta Instructions Cook the Pasta as per the package directions.I salt the water,so pasta gets it. In a baking dish.Add the drained pasta ,Chicken,Alfredo Sauce,Parmesan cheese and mix it. Bake it covered for 15 mins at 350F.Everything is individually cooked,So it is just so that all the ingredients have a chance to mingle together. Years ago I had watched an episode on food TV about the middle eastern breakfast staple,eggs cooked in tomato based sauce.I had to google around to find the exact name of the dish .‘Shakshouka’.That is the name of the middle eastern dish I had watched years ago and still remembered. So today when hubby was getting back to home late from the work,i had no desire to cook anything for myself and kids.Finishing the  leftovers was our dinner option.Oddly enough,all I had for leftover was plain rice,as you might have guessed it and no desire to make anything which requires dirtying lots of dishes and spending time in kitchen.So i made Shakshouka,based on my memory of what it looked like.Really my version is awfully simply and may not be even qualified to be called Shakshouka.This is what went to it. I made this chicken couple of week ago and it was again the result of me not wanting to stand by the stove and cooking.So baking with not much of prep was the option I was looking for.Also,I wanted to use least amount of spices.So i resorted to the following. Chicken Light #ratingval# from #reviews# reviews Print Ingredients 4-5 scallions 2 cloves of Garlic 1/2 small orange juiced 1 Tbl Pickle Juice(optional) Chili flakes Salt to taste 2 Chicken breast Instructions Smash all the ingredients in mortar-pestle coarsely. Cut the chicken breast in thin long pieces,like cutlets. Add the smashed ingredients to chicken and marinade it for 15-30 mins. Saute it at medium high heat,keeping eye on it.
