Do you have busy weeknight meal? As much as i like to cook,I am not in cooking mood everyday.More so, when our days are busy.So i often cook enough for the leftover.I put together this taco bowl,inspired from Chipotle’s rice bowl using some left over roasted chicken and couple of ingredients in hand.    There is not much of the recipe.It does have number of ingredients assembled. Ingredients: Taco bowls  :  You can find this easily in local grocery store. Black Beans : Add 1 can of black beans with seasoning of your choice.You can add chopped onion and celery,if you like or keep it simple.Simmer it in a pot for 20 mins if you added onion and celery else 10 mins will do. Brown Rice  : I used microwaveable brown rice.Until i can find the brown rice ,chipotle uses.This one from costco will have to do.I mixed  some freshly made salsa with cilantro for added kick. Growing up, I remember my dad telling us to eat couple of nuts, mainly almonds, every day, for it is good for you. Though I wasn’t fond of nuts, i did like cashew and almonds. My family is same way. We had friends over a week ago for playdate with purpose.Of course,where you have friends,you have food.I wanted to keep the cooking very simple and easy,so i decided on hot dogs.Though some how grilled hot dogs with mustard and ketchup didn’t seem very dinner like to me,you know what i am saying? So that’s where the chili dogs comes in.Chili dog is a hot dog which is served with bean-less chili.However this chili does have beans 🙂 The recipe is from my dear friend Jessica.Super easy and very popular among our friends.I followed the recipe but used only one can each of beans.Its a keeper 🙂 You can top the Frito (corn) chips with chili and cheese.Melt the cheese and serve it like a Frito pie. You can serve it over hot dog ,which is what we did. You can eat this chili,just as it is, with chips. What comes in your mind with American food? I immediately think of hot dogs,burgers and fries.American food is much more versatile however.Please don’t get me wrong,I am fully aware of regional specialties and many comfort food we have here. So what exactly is hot dog?I wondered about it when i first got here.Then i remember one of my friend having it.I was little disappointed to see it in its simplicity for the first time.A log shaped meat in bun,topped with ketchup and mustard.What is there to like about it?I have never tasted the hot dog myself being non-red meat eater.But i have seen hot dogs being served in many ways.The one which i put together for friends and family,looked too tempting 🙂 There are lots of theories behind the name and i would suggest  you check out the library! Couple of months back,i borrowed a Greek cooking book from a friend of mine.As i was flipping through the book,i came across Moussaka.It has been in my to-make list for very very long time.So i finally decided to give it a try. Moussaka is type of Greek Lasagna,just to give you a visual.Pasta is replaced by thin eggplant slices.I grew up with eggplants,we call it ‘brinjal’ in Indian english.My mom prepared it many ways and i like them all.But here is a challange,i am the only one in a family who likes it.I knew,i was making this meal with complete anticipation of rejection and yes they picked out the eggplants and ate the meat.I served it with pasta. Looking back,there are couple of things,i would change about this dish,when i remake it.(not a matter of ‘if’) If you do not like eggplants at all,don’t make it. How is the weather where you live? We are in South Texas.In this month of May,i can not tell you in what season we are in.I don’t know when can i put my warm winter cloths away.My plants are totally confused.It doesn’t know if it should bloom or wait.I check weather forecast everyday .Habit which i didn’t think was possible until i started living here .There is a saying here in Texas,there are four season and in Texas you can get all four in one day.I agree 🙂 Couple of days back,we had stroke of cold front.Those up north can laugh at me but  we don’t need sleet or snow to tell us it is cold.We are ready to snuggle with coffee and a book when mercury touches 50F and wind is whipping with cloud cover.So one such evening,i made chunky chicken stew which is perfect for the chilly day {even if that chill is sandwiched in between 85F days :-)).Would you agree?
