Couple of week ago,my friend Rebekah,brought some hand picked pomegranate from her garden.Did you know i love Pomegranate?I think more then eating i love how pretty the ripe pink cut pomegranate looks.Just like pink – red jewels adorned inside a pale case.Ripe Pomegranate are one of the sweetest thing you will taste,even if it comes with the bonus gritty ‘seeds’…Since i have tasted it its natural fruity way, juiced up ‘poms’ doesn’t excite me as much but i still love it nonetheless. Pomegranate,which i had in hand, was pale pink and not very ripe so i decided to juice it up and cook with it but I had no experience  of ‘cooking’ with pomegranate,we always ate it as fruit,a rare treat,since it has always been one of those expensive fruit.My dad would buy it and  will laboriously remove it from the casing seed by seed for us to nibble on.Very sweet and tasty. Do you remember i made Parsely Pesto couple of days may be week or so ago ?So i guess i was trying to figure out how else i can use the pesto which my family would like.Another pressing reason was i was tired of moving the pesto bowl inside the fridge,so getting over with was the solution i was looking for.Answer came in one evening,when i was tired to cook much of a meal and easy is what i wanted. And we had pesto chicken.You do not have to add mustard but i had the bottle sitting and i wanted to make use of it,so i did. It adds such subtle,little more sophisticated flavor then just plain salt and pepper.You can grill the chicken and baste with pesto in the end,i just used the good old pan. One of my husband’s favorite thing to eat is shrimp.He prefers shrimp over chicken if we are eating out.Since it cooks so quick,it is perfect for busy weeknight meal.Shrimp is also very light,so i find it great for summer.Frozen shrimp is my freezer staple for all the more reason. So yesterday,when i wanted quick dinner i decided on shrimp scampi.However i love the taste of sun dried tomatoes.It gives such depth to the dish,so i added it to the scampi and so the name !  I prefer olive oil over the butter.Of course,butter will  take this dish to the next level. I used water but white wine would be my favorite choice of liquid to deglaze with.  Do not add water until shrimp is brown,it will prevent it from browning.You need very little water, just enough to scrap up the bits quickly without overcooking the shrimp.Another way to do it is,take the browned shrimp out in a bowl and deglaze the pan then pour the reduced liquid back over the shrimp.I was lazy...

This past weekend,we had friends over for dinner.So while i was working out the menu,as you could have guessed,chicken made the cut easily.Roasted chicken precisely.My goal was to keep it simple and my plan was to my rely on ‘Mrs Dash’ seasoning mix for marinade base.With this thought i went to bed the night before. Morning came and i rolled I got the chicken out and started putting them in Ziploc.I was on my way to get ‘Mrs Dash’ out and something happened.. I thought,Why don’t i just brine it?So i did for 4 hrs. Once brined,’Mrs Dash’ was waiting to be used in the next step.Then i remembered ‘two bunches’ of parsley i had bought.It is an anomaly since i  am not a parsley fan,i prefer cilantro over it.I think this is what happened.During our grocery trip my 3 and 5 year old ‘insists’ that they must ‘help’ me,so i ’employ’ them to different tasks.I ask them to name and pick the produce/different items of the shelf.My daughter bags it and my son who(if i am...

Decade ago,when i was new here, living in an apartment, working long hours(I do not miss Friday release and  intense project deadlines by the way),we didn’t explore as much as we would have liked to food wise.One day, my friend, Sabitha, came home and raved about the chicken satay with spicy peanut sauce she had for dinner at one of the Thai restaurant.She bragged about this place and this dish couple of times, so it was time for us to check this out.So one night we all headed for dinner..And there..i tasted ‘Chicken Satay with peanut sauce’  for the first time..and was she right or what !It was to die for..i don’t remember what else i ordered there but i remember the dish as  Chicken was cut in thin narrow strips(not chunks) and skewered. Peanut sauce was spicy.It was divine with Satay. I know that peanut butter is not authentic Thai ingredient but sweetness and spiciness works very well.I served the meal with Caribbean rice.   We checked out the map of Thailand.Now i know...

What does July 6th mean to you? Aftermath of 4th July,back to work, may be a birthday or anniversary or just another day in calendar worth rejoicing over.Let me tell you what i remember with this day.Decade ago,this day I disembarked Air India flight at  JFK international airport.Both me and my dear friend,Deepa, looked at each other and probably gasped  in amazement saying something to the effect of ,’’wow..this is it.We are in America.” We were too excited to feel tired after 20 odd hours of flying in coach. We  were greeted by my friend’s relatives at the airport.Priya, Rajnish, Reeba, thank for being there to receive us.It was a relief to know somebody  in the foreign country.Our domestic flight to final destination was not until next morning,so they drove us around to show us NY that evening.We went to the site where world trade center used to be.Magnanimity of 9/11 was unfathomable.
