My son’s favorite Salad

I had no idea that my almost 3 year old son would like this salad,but i served him anyway and he kept asking for more.So goes the name 🙂 .Hope it doesn’t change with time ! I make Black beans,Corn salad a lot during summer.It is my go-to salad to serve along with any dish during this time of the year.Most of the time,i have all ingredients in my pantry or fridge anyway,so it is easy to whip it in a jiffy.So this is how i make it. My son’s favorite Salad #ratingval# from #reviews# reviews Print Ingredients Ingredients: 1 15Oz can of Black Beans rinsed 1 15Oz can of Corn kernels drained Handful of chopped Cilantro 1 tomato,deseeded and chopped 1/4-1/2 of Lemon/Lime juice Chopped Jalpeno(optional) Handful of chopped scallions(optional) Avacado (Optional) Salt and Pepper to taste Instructions Add all the ingredients in a bowl and and mix it together. Mung beans as they are called here,is one of my favorite kind of lentil(yeah,we say it ‘Dal’ in hindi,which translates to ‘pulse’ in Indian english and ‘lentil’ in American ,so there you have it).I like it because it is so versatile,in what you can do with it.You can sprout them and it becomes totally new species with varied uses.Of course,there are  different ways you can dress the ‘whole Mung’ with green skin on or ‘Yellow Mung’ with green skin peeled of. When I do the Indian grocery,I almost always get the lentils and spices and most of the times these lentil comes in big bags,so I am left with lot of lentils to be able to use it in different ways.So I decided to use mung beans to make salad out of it this time,like my mom did growing up. I had the privilege to taste this Yummy Salad first time when my friend Jessica threw me a Baby shower.I became a fan of it that day.Then again on Women’s meet,years later at our church,it reappeared.My friend, Melissa Deming, who is also the person to introduce some of us with this yummy salad, brought it for ladies brunch.Ever since I can’t get enough of it.Both of my friends, labor hard and make their own homemade dressing.Yes it is FAR better than the store bought.I have the recipes for that but long list of ingredients intimidates me and I have saved it for the special occasion.So on this regular dinner night,I relied on store bought dressing.I like the sweetness,tartness and slight bitterness of this salad altogether.This is my easy pour and mix,not much of recipe,salad.
