Camp cooking – foil packs

Camp cooking – foil packs

Couple of weeks back we went on family camping with our American Heritage Girls troop. Though I have done cabin camping before, purist opines that unless you sweat out the ‘tent camping’. It is not legit…so well this one was certainly all kind of legit…And did I love it or what? How often your daughter comes running to you to say, mom, you gotta see the sunset? My daughter loved feeding the horses and chickens, splashed at the river, made mud balls, tasted Kumquats (nature’s sour patches btw). But the coolest of all was to see the lamb only couple of minutes old. I had bit of an apprehension about some things but I was fortunate to go with some very experienced tent campers and they made it look like a breeze. So much so that I am ready for the next one…Time will tell if my future experiences are as breezy as the last one but until then I am dreaming of the next one! I learnt a lot. Dutch oven cooking, foil packs...

Happy Resurrection Day

Happy Resurrection Day

“25 Jesus said to her, “I am the resurrection and the life. The one who believes in me will live, even though they die”. John 11:25 I am celebrating Easter since I got married.Even then I didn’t do anything out of ordinary to mark this day.Couple of years later, kids added, kids growing,I wanted to incorporate more to the day.I want our kids to grasp what this day is all about.Hopping through the blogs,I decided to add a tradition to make cards. So I asked my daughter, who loves to color and draw,”Lets make some ‘Easter’ cards”.She got very excited..’Yes,I will draw some eggs,it will be cute Mom’..Hmmmm..I thought. So I asked,” Think about ‘Resurrection Card honey’.What comes in your mind?”.She said.,”hmmm…Jesus died for our sins..(pause)..on cross..(pause)..on the mountain.” Looking at her card,I asked her, what is ‘inside the tomb’.I was expecting it to be empty. She explained,”oh  just pretending..Jesus ‘was‘ there,he is not there ‘.We said out loud Matthew 28:6,our theme verse…..this is what she draw. You see I only tweaked the words and it...

Crock Pot Taco Bar

Crock Pot Taco Bar

I hosted ‘Easter Spring Party’ couple of days ago with dear friends and sweet kids.I was planning a good grub party which is easy on budget, easy to put together and delegate and certainly does not involve standing near the stove. So me and my friend came up with the idea of setting the Taco bar.Since I can totally make everything in Crockpot and go about doing everything else without worrying about the food. I was introduced to crockpot couple of years ago.I have yet to catch on the craze of ‘Crock pot’ or ‘Slow Cooker’.My Mother in law gifted me a slow cooker and it sat in my cabinets for long time.I didn’t know what I would make in that.It is a paradigm shift for me.Indian kitchen is used to of having ‘Pressure cooker’ for fast cooking.I don’t use  ‘pressure cooker’  as much as my Mom does or many Indian homes do.I just use the regular pots.May be because I don’t make much of the variety as I have been...

My ‘Easter to Resurrection’ story

My ‘Easter to Resurrection’ story

Let me begin by saying,i wasn’t planning on writing any story, let alone ‘My Easter Story’.I was writing the post for the ‘Easter Spring party’,I had blast hosting couple of days ago and it got too long and distinctly disconnected from the ‘food’.Now you are thinking hmmmmmm… I didn’t grew up celebrating Easter.I grew up Hindu in secular world.I didn’t know anyone besides ‘sisters’ of missionary school i attended, who celebrated ‘Easter’.I knew  first comes ‘Good Friday’ and then on Sunday you have ‘Easter’.I always wondered why ‘Good’ Friday is ‘Good’ when it is observed in such  ‘somber’.I think I have an idea now. I do not however remember hearing the stories of ‘Egg hunt’ on ‘Easter’ at all.So if my memory serves me right,I got to know about it when I came here.Though not until I had kids, who got up to the age that they could hunt egg,I got interested in this part.I also learnt that ‘egg hunt’  comes alive with the stories of ‘Peter Cottontail’ and ‘Easter Bunny’,who hides...

Over the dinner

Last evening,we invited our neighbors across from the street for dinner. This was our first time inviting neighbors for dinner, since we moved in.Super sweet semi retired couple from Colorado.Amazing painting artist, easy to talk to and our kids adored them. From my past conversations,I came to know that they have traveled the world,India included,so obviously exposed to different culture and food. So,I decided to do Indian inspired meal for us.I  wanted to spend less time in prepping and cooking and more time visiting and talking to them.So I preferred to stick with classic time tasted recipes. My menu was surprisingly very short.I came up with Chicken Tikka Masala Vegetable rice Rosemary Bread  Banana Pudding Pie All went well over glass of wine, which they themselves produce in their hometown and brought it for...
