We all have days,when you are out most of the day, came back home, tired and question is, what is for dinner?
Our summer days get busy at times. Fun kind of busy of course ! One of that kind of day, my daughter asked me, “Mom, are you going to ask daddy to pick up dinner today?”
“No, my child”. I disappointed her. “We are having quesadilla today”. It was my answer couple of days back.
‘Queso’ is ‘Cheese’ in Spanish. Quesadilla is toasted tortilla with melted cheese inside. You can think of it as a big tortilla sandwich!
- I used cooked shredded taco chicken with bell pepper and onions as filling, topped with cheese. You can use meat of your choice or keep it vegetarian with potatoes and greens to serve it with chutney.
- We love ours with generous dose of guacamole 🙂
- I have not mentioned any amount. I was eyeballing and cooking it hurry. You just want the filling to cover the surface of the tortilla. Bell pepper and onions are optional, we like it.
- You can cook it in two ways. You can add filling in one half of the tortilla and fold the other half over it.Or you have filling sandwiched between two tortillas(‘Roti‘)
