Chicken Salisbury
Decade ago when i came here,my knowledge of meat cuts ,names and products were non – existent .Back home,we ate chicken and fish mostly,mutton occasionally.Indians(Hindus) abstain from eating red meat such as beef and pork and being raised in the family it shaped my taste buds strongly.
When i came here,it seemed like i was bombarded with meat vocabulary.’Deli’ was a new word for me and eating ‘cold meat’ was inconceivable.To this day,i am not a fan of deli meat and cold sandwiches.I would eat that for the lack of better option.Though now,that i am a Christian,i still don’t prefer red meats in any form.I have been asked about it many times and answer is simply,my taste buds doesn’t agree with it and i have no desire to pursue that.There are so many food choices.Let me tell you what happened.
Back then,one day in the cafeteria,I ordered chicken Fried steak.I knew the word ‘chicken’ but ‘steak’ had not entered my vocabulary that time and i didn’t think much of it.On the first bite,i realized it is NOT chicken and friend who did eat red meats confirmed my doubt.I can laugh about it now ! So ever since i have tried to educate myself about different meat, just so i know what ‘not’ to eat 🙂
So when i learnt about Salisbury Steak.Name fascinated me Salisbury?So simply put
- Salisbury steak is ground meat patties(beef preferably),shaped like steak,cooked and served along with gravy and mashed potatoes.
- I call it hamburger with gravy.
- I know traditionally it is made with ‘beef’ but who says you can’t sub the meat of your choice?So i used chicken.
- Recipe is what i thought of adding as i was looking into my refrigerator and spice drawer.I gave it Asian kick with Hoisen sauce(Chinese BBQ sauce),Panko bread crumbs(Japanese style bread crumbs) and curry powder.
It was very well liked by everyone in our family.I served it along with Pumpkin Squash rice.My plan was to serve it with peas and potatoes but i had served peas night before and it would have been sinful to serve peas to my no-peas loving family back to back !
Ingredients
- 1 lb ground chicken
- 1/4 onion and 1 garlic fine chopped
- 1 tea spoon curry powder
- 1 tea spoon Hoisen Sauce
- 1/4 cup Panko bread crumbs
- 1 egg
- salt and pepper to taste
- Oil
- 1 onion chopped
- 1 chicken bouillion cube
- 1 tablespoon corn starch
- 1/2 - 3/4 cup water
- salt and pepper to taste
Instructions
- Mix Salisbury ingredients gently.Don't over mix.
- Shape it like patties and make a ridge mark with your finger.
- Add oil to a pan.
- Cook the patties in the pan until it is done.
- Take it out in a plate
- In the same pan,add 1 teaspoon of oil of there is not enough left,
- Add onion to it and brown/
- Add chicken bouillion cube
- Dissolve corn starch in cold water.
- Add it to the onion mixture.
- Bring it to boil.
- Cook it until it thickens to desire consistency.
- Put the patties back to the gravy and turn the heat off.
- Let is sit in gravy for 5 mins.
- Serve it with rice/pasta/potatoes.
