Chocolate Chip Cookie(Whole Wheat Coconut sugar)
How do you describe JOY?
Okay,if you are expecting some profound answer,you will be utterly disappointed.I don’t have one.But i will tell you,where i saw it.You are curious now,aren’t you?
Our subdivision have security guards.When we are driving by,we wave them ‘hi’ back or ignore(*rude*) and continue driving,unless we have trouble or we need their help with something.We do not stop at the post everyday but we notice that they are always on duty.
So couple of days back,when we stopped instead of waving back ‘hi’ and driving away,i was promptly asked,”How can i help you Ma’m?”And i responded,”Hmmmm…i just brought some cookies for you guys.”You can immediately see,it was not expected response for them to hear.
They are not accustomed to it may be as much.I don’t know.I am not sure.What i can tell you though,on that random evening of early December day,the security guard didn’t expect someone to stop in the evening hour to hand them cookies and tell them ‘Thank You’.The unexpected happiness and gratitude my average 2 dozen cookies brought on the eye of recipient was ‘JOY’ to me.I was ‘Joyful’ to see the eyes and face beaming.
“When they saw the star, they rejoiced exceedingly with great joy.” Matthew 2:10
So i believe the Joy,the wise men felt to see the star as a sign of the birth of Messiah must be something i would NEVER know.The gifts which they brought to newborn king, i can not offer though I will take joy in serving others,even if it is by offering one cookie at a time to an unassuming person on a very ordinary day !Thank you to my friend Melissa for inspiring the reluctant baker in me,which prefers rather to be cooking 🙂
I pretty much followed the recipe at cookiemadness.However, i didn’t had the exact same kind of sugar and butter used in the recipe.I also tweaked the flour and omitted the nuts completely.
Cookies were soft and delectable however not as chewy as classic chewy chocolate chip cookies.No one had problem devouring it 🙂
Ingredients
- 1 cup Whole Wheat White Flour
- 1/4 cup Whole Wheat Pastry Flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon Salt
- 8 tablespoons unsalted butter softened
- 3/4 cup coconut sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 3/4 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350F.
- Cream butter and coconut sugar together.
- Add vanilla and egg to it.
- Add the dry ingredients mix.
- Stir the chocolate Chip cookies.
- Scoop out cookies on a cookie sheet,slightly flattened.*important*
- Let it bake for 8-9 mins.
- Enjoy!
