Cinnamon Rolls
Do you love cinnamon rolls?
I do..a lot..actually we all do in a my family.So when i had asked my daughter earlier this month,what we should have for breakfast on Christmas morning?Her quick response was cinnamon rolls.I couldn’t have guessed !
I have watched PW cinnamon rolls episode,when it first came on and i had grandiose idea of making dozen pans full of cinnamon rolls covered in ooye- gooyee sugary goodness ever since,just like Ree did.*sigh* it didn’t happen like that,this year again.
Then a week or so before Christmas,mails arrived.And there it was in packet,one of the most delightful fragrant spice.Vietnamese cinnamon,one of my sweet friend had sent me this little surprise.Now the first question,do you have cool friends like that?I am glad you do :-).Second and last question,do you get EXCITED to see something like Cinnamon or Annato or Kafir lime in your mail box?Yes,i was pretty thrilled too,as if you can’t tell.
So the next best thing,after indulging in aroma of this exotic intense cinnamon was to use it somewhere and so i did.No,not what i said earlier but i did manage to make dozen rolls just for us.In fact,i cramped in the pan,so much that it didn’t had enough room to expand(don’t do that mistake) but it was forgiving and still tasted great.I didn’t get the chance to freeze it but it will totally make my freezer breakfast menu.
I followed the cinnamon rolls recipe at deliciousyetnutritious,pretty much.
I used the white stuff for frosting.Yes,white powder sugar.I was also generous in butter and sugar and cinnamon.If i saw there was a blank dough peeking out,i made sure it got the taste of cinnamon and sugar too.
I am mostly a fan of cardamom but sometimes too much of a good thing,may not be a good thing after all.So i left it out and let the cinnamon prevail.
It was DELICIOUS.
Ingredients
- 1/2 cup warm water
- 1 tablespoon Active Dry yeast
- 1 tablespoon honey
- 1-1/4 cup milk
- 1/4 cup butter
- 1/4 cup honey
- 2 teaspoon salt
- 4-4 1/2 cups whole wheat pastry flour
- 1/3+ cup butter, melted
- 1/3 cup cane sugar(Demarara)
- 2 teaspoons cinnamon
- 2 tablespoons butter, melted
- 2 tablespoons milk
- 1/2 teaspoon vanilla
- 2 cups powdered sugar
Instructions
- Proof the yeast in a mixer bowl by adding yeast to warm water and honey mixture.
- Let it bloom for 5 mins,until it gets foamy.
- In a pot,heat the milk,butter,honey and salt,not boiling.
- Add flour,one cup at a time,to the yeast and mix it.
- Pour hot milk mixture ,little by little ,to the flour and let it mix until dough comes together.
- Let it rise covered in warm place until the dough doubles in size.
- It took me 1-1/2 hour easily.
- Preheat oven to 350F
- Roll the risen dough about 1/4 inch thick on floured surface.
- Mix cane sugar and cinnamon powder in a bowl
- Brush the melted butter generously on rolled out dough.
- Sprinkle cinnamon-sugar mixture generously on buttered dough.
- Start rolling the dough,long side,slowly like a log.
- Cut the log, in 1-1/2 inch pieces.You will get around 12-14 pieces.
- Let it stand in pan,open side facing.
- Let it rise in a pan for 45 mins,without overcrowding the pan.(Same pan,you are going to bake in,i used round Aluminum foil pan)
- Bake for 20-25 mins.
- While it is baking,whisk together the icing in a bowl.
- Let the cinnamon rolls cool for about 10 mins.
- Drizzle the icing all over it.
- Enjoy it warm.
oh my gosh – those look absolutely amazing! I want them now! Guess you can’t fit those in a mailer? 🙂
