…..SO i am late.. really late…This post was meant for the day after thanksgiving ,when you have leftover cranberry sauce staring at you and you are trying to decide,if kitchen sink is its only destination.*sigh*.I am late in posting it but i did end up using the leftover cranberry sauce in making muffins later that week.

For the record,i really liked the homemade cranberry sauce this year. I will get round posting that recipe may be by next thanksgiving ๐Ÿ™‚

I came across the recipe of making muffins using leftover cranberry sauce atย twopeasandtheirpodย and decided to give it a try.I was taking a risk with it i knew.

My family do not like to bite on tart piece of oozy fruit from their muffins or cake or bread.So for that reason,i stay away from jam and jelly filled baked goodies .Stawberries,blueberries do not make up for good experience in our house,if biting through it can not be avoided in baked yums.So you can understand,i was taking a chance with the leftover cranberry sauce.I heard the complains but it was eaten(mostly) nonetheless:-)

  • I baked mini muffins instead of jumbo muffins because i know my family habits and i wanted to avoid complete waste of one big muffin ๐Ÿ™‚
  • I tweaked the sugar,flour and temperature for mini.
  • The recipe is making use of leftover cranberry sauce but get creative and use apple butter, jelly, jams, preserve whatever that you like.

So if your family doesn’t have the tart issues like mine does,give it a try or if they do give it a try anyway,like it did ๐Ÿ™‚

Cranberry Sauce Muffins

Yield: 48 mini muffins


    Dry Ingredients
  1. 3/4 cup Whole Wheat pastry flour
  2. 3/4 cup Whole Wheat White flour
  3. 1/2 teaspoon salt
  4. 2 teaspoons baking powder
  5. 1/4 teaspoon cinnamon
  6. Wet Ingredients
  7. 1/2 cup coconut sugar
  8. 1/4 cup canola oil
  9. 1 large egg
  10. 1/3 cup milk
  11. 1 teaspoon vanilla extract
  12. 3/4 cup cranberry sauce (thanksgiving leftover)
  13. sprinkled with turbinado


  1. Mix all the dry ingredients in a bowl.
  2. Whisk sugar with rest of the wet ingredients.
  3. Add dry to wet ingredients.Divide it in half portions.
  4. Grease your muffin pans.
  5. Scoop out the muffin batter from portion 1.Add a tea spoon of cranberry sauce.
  6. Top it off with another scoop of muffin batter from portion 2.
  7. Bake at 400F for about 7-8 mins.
  8. Enjoy with coffee.


I used mini muffin pans instead of jumbo and cooked it accordingly.You can use any kind of jelly or jam instead of sauce.
