Granola Cluster
Couple of weeks ago,i had the opportunity to help with Vacation Bible School at the church we are visiting.If you know about VBS, you know it means early start in the morning.So some of the day,i may have coffee before i leave and if not,i would grab a bag of homemade granola to munch on the way.So one of that day,as i was munching,my friend,Keri, who i was helping,noticed and said,”You know what i like better then granola? granola cluster,easier to eat on the go,we are always on the go.” She had a good point.
So as you are reading this post,we are most likely on our road trip to the beach,praying that it doesn’t rain.Isn’t that odd that all the time that we are at home,praying for rain to get us out from drought,it remains dry as it could be and make a plan for beach and there is tropical depression forming in a gulf.We will take rain here in Texas anyday,not complaining.*Ahem*.
I thought of Granola cluster for our road trip.Crunchy snack during the drive and good breakfast item in a morning ,for me at least,since my breakfast habits rather hang in the balance of two extremes,elaborate breakfast or only coffee.
Granola is probably one of the easiest thing to bake.Basically mix what you like with oats and bake away.I nearly doubled and adapted from this recipe.
- I used the nuts i had in hand.You can add whatever you like,pecans,coconuts,sunflower seeds your choice.I ground the nuts because it helps with binding.Also my family doesn’t like chewing down on them.
- If you are using coffee grinder for spices,like i do,make sure you wash it thoroughly before you grind quick oats.Use baking soda in the end to get rid of the smell of spices.
- I could have used all honey but didn’t have enough so i subbed with maple syrup for the part of it.
Ingredients
- 2-1/4 cups quick Oats
- 1-1/2 cups quick Oats (to grind)
- 1/4 cup wheat germs
- 3 Tablespoons Raw pumpkin seeds
- 1 Tablespoon Flax seeds
- 1/2 cup walnuts
- 1/4 cup silvered almonds
- 1/2 cup brown sugar
- 1/2 cup honey
- 1/4 maple syrup
Instructions
- Grind 1-1/2 cup quick oats.I used spice grinder aka coffee grinder.
- Preheat oven to 300F
- Grind the nuts rough.
- Mix all the ingredients.
- Spread it in cookie sheet,like a giant cookie.
- Bake for 20-25 mins.
- Let it cool.
- Break the granola in a clusters,size you like
- Munch.Enjoy with yogurt,topped with fruits.
