Can you name some of the snacks from Mexico?

 I met Laura,who is from Mexico, couple of days back at a playdate. Won’t you know it that we landed on the fascinating topic of food as we watched our children jump on trampoline or play air hockey?

I asked Laura,what she misses the most from Mexico, food wise? She said ‘Empanadas de Cajeta‘(similar to ‘ Khoya Gujhiya’ for my Indian family).She always asks her mom to bring it with her from Mexico.Snack wise,’Guacamole’ with chips or sliced Avocados sprinkled with salt and lime juice is pretty popular too.

I quickly identified with Laura’s Empanadas de Cajeta whereas Stacey, who spent her childhood in Brazil, is well familiar with Avocados but not as Guacamole. Brazilians make Avocado smoothie.

I had not even heard of Avocados until I got to US.Since it was introduced to me as Guacamole, it is hard for me to imagine in smoothie but I am open to it.

We are big fan of avocados in my family. My son loves it just like kids in Mexico do. I love it with eggs, in sandwiches or Guacamole with chips. Many have texture preference, chunky or smooth guacomole. It doesn’t bother me either way.

  • Guacamole is easy enough for kids to put together.So make sure you use the help from little hands sometime.
  • One important thing to remember with Avocados is,it oxidizes when it comes in contact with air and turns black.Lime juice prevents in from happening.Also you want to keep it covered with tight plastic wrap.I make it in last minute.

Guacamole

Ingredients

  1. 2 Avocados
  2. Juice of 1/2 Lime
  3. handful of chopped Cilantro
  4. handful of chopped Onions
  5. dash of ground black pepper
  6. Salt to taste

Instructions

  1. Slice the Avocados in half.Remove the seed.
  2. Scoop the pulp out in a bowl.Using fork or spoon,roughly mash it.Does not have to be smooth,
  3. Add rest of the ingredients.Mix it well.
  4. Cover it with plastic wrap if you are not serving it immediately.
  5. Enjoy it with tortilla chips when you are ready.
