Mung Bean Salad

Mung beans as they are called here,is one of my favorite kind of lentil(yeah,we say it ‘Dal’ in hindi,which translates to ‘pulse’ in Indian english and ‘lentil’ in American ,so there you have it).I like it because it is so versatile,in what you can do with it.You can sprout them and it becomes totally new species with varied uses.Of course,there are  different ways you can dress the ‘whole Mung’ with green skin on or ‘Yellow Mung’ with green skin peeled of.

When I do the Indian grocery,I almost always get the lentils and spices and most of the times these lentil comes in big bags,so I am left with lot of lentils to be able to use it in different ways.So I decided to use mung beans to make salad out of it this time,like my mom did growing up.

Mung Bean Salad


  1. 1/4 cup Whole Mung beans
  2. Water
  3. 2-3 chopped scallions
  4. 6-7 cherry tomatos sliced
  5. handful of chopped cilantro
  6. Salt to taste
  7. Lemon/Lime juice to taste


  1. Soak the mung in cold water until it plumps up,4-5 hrs or you can soak it overnight.
  2. Add rest of the ingredients.Let is sit for at least 30 mins.
  3. Enjoy !
Yummy Notes:
  • It is easy and healthy refreshing snack or morning bite.It might be little bit of acquired taste for many,so I say keep a openmind and give it a try.You might like it after couple of try.
  • You can add chopped Jalapeno to it and can drizzle some olive oil if you like it.
  • I think 1 tsp of roasted ground cumin will go well with it,i haven’t tried it yet but my experience tell me,most of the time roasted ground cumin pumps up the flavor for good.
  • You can sprout these beans easily and  use it in fried rice too.
