Pasta with Chicken

Last evening was one of the those day,i wanted to take it easy on dinner and was looking for quick .way out.Casserole would have been great.But No,it didn’t work out.I lacked key ingredients.So my next option was pasta one pot,if i can.

We can’t go wrong with pasta with our family.Particularly my daughter.She loves loves it.

  • I cooked a pound of pasta but used only half of it for this dish and froze half for later.Also i would use any shaped pasta but not the spaghetti.I just feel the sauce goes well in the nook and cranny of shaped pasta,then stringy spaghetti.Not to mention,i was packing it for lunch next day for the school,so ease of eating in school cafeteria was other thing i had to think about.
  • I also used bone-in chicken thigh,use what you got.If you are using chicken breast,cube it before cooking.That way you do not need to cut in small pieces later while mixing it with pasta.
  • Cook pasta and chicken with broth,stock or wine  if you like for enhanced added flavor.I had none so i used plain water.

  1. 1/2 lb Rotini Pasta
  2. 6 bone-in chicken thighs
  3. 1 small onion chopped
  4. 1 red bell pepper chopped
  5. 2 medium size tomato chopped
  6. 1/2 teaspoon Thyme
  7. 1/2 teaspoon Dill weed
  8. 1 big clove of garlic
  9. Oil
  10. Salt to taste


  1. Cook the pasta as per package direction.
  2. In a pan,heat oil.
  3. Saute Onion until it is translucent.
  4. Add chicken thighs,seasoned with pepper.Add crushed garlic.
  5. Once chicken is browned, add spices.Stir for 1 min then and tomatoes.
  6. Once chicken is more then half cooked,add bell pepper.You do not want to get pepper too mushy.
  7. Salt it as desired.
  8. Cook it covered at low until it is done.
  9. Take it out in the plate and debone it.
  10. Add the boiled pasta back to the sauce chicken was cooking in.
  11. Add deboned chicken to it.
  12. Stir it all.Top it with cheese you like.
  13. Enjoy it with the side of salad.
