Peachy Chicken Salad
Day before thanksgiving was busy very day for me in the kitchen.I wanted to do as much prep ahead as possible and whatever that i can cook in advance i wanted to do.So it is odd to think that i don’t wanted to cook meal for us that day. Previously we have ordered pizza.Now we live bit far to order pizza and i didn’t had anything that i can just throw in the oven.I think i had some idea what my mood will be like that day,so i had picked up Croissants.
I thought,chicken salad sandwich would be easy.It doesn’t take active standing by the stove time.I have a go to chicken salad recipe,which i have made number of times.So that would have been the obvious choice.However i noticed,i had peaches and that changed my plan.I had watched chicken salad with peach chutney in one of FN show and ever since i wanted to make it.So it started.I ended up making peach chutney and boiling chicken and the result was one yummy chicken salad sandwich.
My measurements are eyeballed based on what i remember from the show.I can not find the link. It was well liked by my husband,who was accustomed to previous version 🙂
Peach chutney has bunch of ingredients but it doesn’t take time to cook.I like the idea of texturizing the meat by grinding some and keeping some shredded.
Also,you can serve it with lettuce and tomatoes,we just ate it right on the slice of croissants.
Ingredients
- 2 chicken breast
- 3 tablespoon yogurt
- 3 tablespoon mayo
- 1/2 teaspoon curry powder
- salt
- handful of sliced grapes
- handful of dry cranberries
- handful of chopped scallion leaves
- 1 sliced peach(pit removed)
- 1/4 cup small onion chopped
- 1/4 cup red bell pepper chopped
- 1/4 teaspoon cinnamon
- 1/8 cup apple cider vinegar
- 1 teaspoon salt
- handful of dry cranberries
- 1 teaspoon sugar
- salt
- Croissant
- Lettuce leaf(optional)
- Sliced tomato(optional)
Instructions
- Boil the chicken breast until it is cooked.
- Meanwhile,add all the peach chutney ingredients in a pot.
- Cook it slowly,until chutney like consistency is reached about 15-20 mins.
- Shred the cooked chicken breast.
- In a food blender,add half of the chicken breast and chutney.Grind it.
- Mix it with the rest of the chicken breast.
- Add mayo,yogurt,curry powder,salt.Mix it.
- Add more mayo,if it is too thick.Taste it .
- Add grapes,cranberries,chopped green onions to it.
- If it is not sweet enough,add more grapes or some pickle relish to it.
- Adjust curry powder to your taste.
- Spread the chicken mixture in between sliced croissants.
- Enjoy!
Notes
You can use frozen peaches,if you don't have fresh.
