Pumpkin Muffins with Streusel topping
Yesterday my sweet friend Jessica visited us.We have playdated since our kids were wee little.By that i mean,when they slept in their car seats during playdates.Yeah,now you are thinking if it was a playdate or mommydate :-).
Since we moved out from the city,we don’t see each other as often.So you would guess that it took us only five times of rescheduling and couple of months that the day finally arrived.I kept it complete surprise from my kiddos.Its more fun that way ! We took advantage of it.Girls and a little boy played and rode and climbed the trees while moms chatted outside 🙂
It is fall in Texas, as good as fall can be here.So I am in ‘pumpkin’ mood.Let me tell you something,pumpkin as i know it in US, is new thing to me.I had a very hard time explaining to my family in India,what Americans mean by Pumpkin.What we called ‘pumpkin’ in India is called ‘Opo Squash‘ here.So this is for you my family in India.
Pumpkin is very well adored here during fall.Here you get the glimpse of pumpkins as a part of hay maze,in pumpkin patch.Popular fall tradition everywhere here.We look forward to it every year.Pumpkin comes in many different sizes.I was being cheap and got little pumpkin for kids,you can even see the doodling my son has done in one of the pumpkin.Wait for upcoming pumpkin palooza as i explore it more.
I set out to make pumpkin muffins with streusal topping for kids to snack on.Lets just say my kids,particularly my son,could not keep his hands off from it.
I adapted from this recipe and added streusel topping to it.I think streusel makes everything just a tad better,won’t you agree?
Ingredients
- 1 cup whole-wheat white flour
- 1/2 cup whole wheat pastry flour
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 2 teaspoons Pumpkin Spice
- 2 eggs
- 1/2 cup veg oil
- 1/2 cup honey
- 1/2 teaspoon vanilla
- 1 cup pumpkin puree
- 2 Tablespoons whole wheat white flour
- 2 Tablespoons butter cubed
- 2 Tablespoons Turbinado sugar
- 1 teaspoon cinnamon
- regular size muffin pan
Instructions
- Preheat oven to 350F.
- Mix all the dry ingredients in a bowl.
- Whisk the wet ingredients in separate bowl
- Add dry ingredients to wet.Mix it well.
- Line the muffin pan with cupcake liners.
- Fill 3/4 of the muffin pan with the batter.I use ice cream scoop.
- Sprinkle the streusel topping to it.
- Bake it for 15-18 mins,until the toothpick inserted in middle comes out clean.
