Pumpkin Squash Rice
Meet my fall friend butternut squash.I have seen it hanging along the side of zucchini. I look at them all the time but don’t buy it.In general,squash and our family don’t get along very well.Particularly the kind which tend to be sweet naturally. To make this taste situation interesting, i thought,how about if i add pumpkin to mashed butternut squash. Either it will be great or bomb.
I have been experimenting with pumpkin lately,produce of the fall.So far my experiments have gone well and no one have complained about eating pumpkin.I also noticed that all my pumpkin preparation thus far have been some sort of sweets, dessert .So,I wanted to add a savory twist to it and what is better then combining it with my most trusted pantry staple, rice.
- Butternut squash is good for you.Orange vegetable.As tough it is to slice it,after roasting it for 45 mins it turns out pillow-ye soft and of course sweeter.I freeze the unused butternut squash for later.
- I knew butternut squash and pumpkin together will add sweetness to the dish,which none of us like in savory dishes.So to balance it out,i added curry powder.
- You can use brown rice in the dish,if you want to.
