Rainbow Potatos
Couple of days back,as i was passing by the potato aisle,i caught a glance of purple potatoes.I have been looking for these purple Peruvian potatoes for a while.
Though,eating potatoes may sound like working against all your new year resolutions to keep starchy food out,i might just add these purple potatoes are good for you.
So as i bought purple,i thought why not get some red and then some white too and make rainbow potatoes :-)I wanted to keep it very easy and simple,so i added only garlic and paprika with bit of oil to saute it.These medium thin potatoes doesn’t take time to cook.
And those of you,who are wondering about taste ,purple potatoes tastes pretty much the same as regular ones.Though you may have convincing to do at the dinner table,to even try one.My 3 year old was picking them out meticulously,with a look on his face asking “what is that color thing in the potatoes?”
Ingredients
- handful of purple potatoes(5-6)
- handful of red potatoes(5-6)
- handful of yellow potatoes(5-6)
- 1 teaspoon paprika
- 2 cloves of garlic(optional)
- salt and pepper to taste
- 1 tablespoon oil
Instructions
- Wash and slice the potatoes length wise in 3s.
- Heat the oil in a pan.
- Add garlic.In a minute,add potatoes.
- Let it cook at medium high heat for couple of minutes stirring.Not letting it burn.
- Season it with paprika ,salt and pepper.
- Cover it and let it cook at low heat.
- Enjoy as a side dish.
