Roasted Chicken with Salsa Verde
This dinner almost didn’t happen.We were doomed to have another take out dinner or other not so great home cooked meal yesterday.I had left home at 11 in the morning and didn’t get back until evening between book fair,gymnastics and must do grocery run.My family has been very sweet and forgiving to me when i cook another blah..meal.It is ‘me’ who has trouble adjusting with that.I really wanted to change that for ‘my sake’.I looked around my kitchen,pantry and fridge and this is what i had
- Roasted chicken i had made in weekend
- Pinto Beans i had cooked and frozen
- Tomatillos i had in refrigerator
- Spanish rice waiting for its purpose.
So few hours which i had in morning,while my son watched another episode of ‘busytown mysteries'(I know) ,i quickly put Spanish rice to work,roasted tomatillos for salsa and threw in some spices in beans.Voila! I had dinner ready to feed the kids,who i knew will ask as they walk in the door,”Mom,i am hungry,i want to eat.”..As if mom was sweating all day to have plated dinner ready at the table,standing at the door.Not to mention we were thankful for another ‘almost didn’t happen’ delicious meal.
