This is my another twist to skewered chicken.’Shish’ in Turkish means,’Skewered’ and ‘Taouk’ is Chicken…So now you know what ‘Shish Taouk’ is.Dish is middle eastern in origin,Lebanese precisely.Notion i get about this dish is,’Garlic’ is a star ingredient of this dish,combined with ‘Thyme’,’Lemon juice’ and good amount of ‘olive’ oil are the essential part in making this.This is how mine came about.

  1. 2 Chicken breast (cut in cubes)
  2. Juice of 1 and half lemon
  3. 1 tsp of Oregano
  4. 4 hunky cloves of garlic
  5. 1 tsp of Whole grain mustard
  6. 1 tsp of ground black pepper
  7. Salt to taste
  8. Olive oil
  9. 6 bamboo sticks


  1. Mix all the ingredients together and let is marinade for at least 30 mins - 2 hrs.I left it to marinade for 2 hrs in refreigeretor.
  2. Soak the Bamboo sticks for at least 30 mins.
  3. Prepare the grill/cast iron skillet.
  4. Lightly spray with oil.Lay your skewered chicken down and cook the chicken until done.
  5. I served it on the bed of Tomato Rice.Of course you can eat it any way you want it.

Yummy Notes:
  • I got the impression that ‘Thyme’ or ‘Thyme based’ spice mix called ‘Zatar’ is essential to this dish.I had neither,so i used  dried ‘Oregano’ instead.
  • Soaking the bamboo sticks in water prevents it from burning during grilling process.Of course,no one is stopping you from using metal skewers.I kinda like the earthy charm of bamboo sticks 🙂
  • Enjoy this dish with Pita Bread and Tzatziki sauce for whole middle eastern effect.
