Pumpkin Brownies

What is one of your most favorite American dessert? Mine is B.R.O.W.N.I.E 🙂 I like fudgey,bit soft brownie,right out from the oven with coffee.I did exactly that as i watched ‘The Artist’ last night,totally against my plans of sleeping early.For the record,its  a good movie,good silent movie of 21st century :-).I liked it actually more then i thought i would.Now go and watch it,if you haven’t already ! Right now,we are experiencing ‘winter’ in Texas.Yes when sun doesn’t come out  and mercury touches 50F and below,it is cold here.Fall is in the air and i love the rare glimpse of fall color  at the lake near our house. Couple of weeks ago,i renewed my Costco card.Still trying to convince myself,it was a right decision.During my last trip i noticed Dates.I think the last time i had dates,i was still in school.Like high school. Hmmm…are you guessing my age? Don’t. I am not a big fan of dates but i like ‘date puddling’  my mom makes.Very rich.These days,i have been looking for a way to sweeten the dish naturally with fruits.So i felt,i can use dates for that reason.Though Costco did not have anything less then 2 Lbs and i felt like i “MUST” have this “NOW”,i bought it.So with that began the hunt for recipes,which my family will like it,in their first experience.Finally i decided on this date bar recipe. Then i adapted.You are not surprised,are you? I did not have “white” chocolate chips,i had regular semi sweet chocolate chips.Why?It is much more versatile  and better liked in our family.Beside,cocoa vs not cocoa..Hmmmm…cocoa please. I have favorite brownie recipe which we like and depend on.However continuing   on  whole wheat journey that we have barged on and forcing my family to attempt and enjoy it,i wanted to try whole grain twist to this classic American dessert. Particular cocoa powder which is used ,had strong,slight bitter chocolate taste to it which i don’t mind,though my family would have loved the ‘regular fudge brownie’ better.Since everyone came back asking for it next day,i will not worry about it anymore.So if you love chocolate you will like this brownie.If you don’t like chocolate all that much,give it a try.You may still like it ! I also thought using whole wheat in this recipe is win-win,since chocolate overshadows the ‘flour’. I used Turbinado sugar in this recipe which is not as processed as regular white and brown sugar.It is also drier then regular brown sugar which the recipe calls for,so my initial thought was to use honey to compensate the dryness.However when i saw sugar and butter melted together,...

Couple months ago,my friend Ethel had made Ono butter mochi and with that i was introduced to Mochiko.A sweet  and glutinous Japanese rice flour.I was looking for this particular kind of rice flour in our nearby grocery store but couldn’t find it.Disappointing.So Ethel got me her box of rice flour.Isn’t she sweet? It sat in my pantry for little while,i was trying to figure out what to make using that which not only me but everyone else in the family will like it too.So one night as i was watching food network, where episode was focused on Hawaiian dish.We have been to Hawaii and i love love tropical island of Hawaii.What grabbed my attention was the usage of Mochiko flour across the dishes. Hawaii has largest number of Japanese population in US,so Japanese cuisine is part of Hawaiian culture.Suddenly i was in look out for Mochi.I came across the recipe for Chocolate Mochi Brownie   which  i followed as it is. I made Brownies today and it was not dry,overbaked or burnt ..yes thats a big achievement in itself..I love brownies better then cookies or cake but i never had luck making good brownies.I have even destroyed the store bought mix couple of times,can you believe it?
