When i heard about ‘Bubble and Squeak’ for the first time,i smiled in amusement,I could not wait to find out what the dish is all about?How often you come across a dish, which is named after the sound it makes,as it cooks? That’s precisely what it is.Bubble and Squeak,i like to say that,just thought ¬†you should know ūüôā My friend Jane is from England.One of the nicest person,you will ¬†meet.Not to mention,her English accent is charming.I was quizzing her about English food :-)She was very gracious to answer all my questions and shared some pictures of her native country with me. I have been forever confused about the ‘tea’ time.Glad that Jane cleared some of those doubts for me.She said,”¬†Growing up,what we call lunch time in the US,it was called dinner time and what US call dinner time was called ¬†tea time”.Fast forward some odd years,’lunch is midday, tea time around four and dinner in the evening.’ ‘Bubble and Squeak’ ¬†is traditionally made with leftover vegetables from Sunday roast...

On our most recent trip to the beach,do you know what i most looked forward to? No,its not sand castles ,beach,waves and body surfing unfortunately,though all of them were certainly lots of fun.I most looked forward to delicious seafood dinner every night with family.And did we eat our heartsful¬†or what.. There is famous joint called ‘Cap n Roy’ which was highly recommended by ¬†friends.We had never eaten ¬†there before,so it was time for us to check that place out.And so we did one of the night.Not sure what is the¬†specialty¬†of that place, i am guessing fish tacos because i noticed lot of people ordering it that time.But i wanted to try something¬†spicy¬†and something with rice.Can’t keep my ¬†Indian saturated palate away from rice for long. Decade ago,when i was new here, living in an apartment, working long hours(I do not miss Friday release and ¬†intense project deadlines by the way),we didn’t explore as much as we would have liked to food wise.One day, my friend, Sabitha, came home and raved about the chicken satay with¬†spicy¬†peanut sauce she had for dinner at one of the Thai¬†restaurant.She bragged about this place and this dish couple of times, so it was time for us to check this out.So one night we all headed for dinner..And there..i tasted ‘Chicken Satay with peanut sauce’¬†¬†for the first time..and was she right or what !It was to die for..i don’t remember what else i ordered there but i remember the dish as¬† Chicken was cut in thin narrow strips(not chunks) and skewered. Peanut sauce was¬†spicy.It was divine with Satay. I know that peanut butter is not authentic Thai ingredient but sweetness and spiciness works very well.I served the meal with¬†Caribbean rice. ¬† We checked out the map of Thailand.Now i know...

Let me introduce you today to my sweet friend Rebekah.We met couple years ago at child birth class of all the places (don’t laugh !) even if we have been going to the same church but never really did strike the conversation.Odd, i know !Time has passed since then.Couple of kids later and insert couple of missionaries trip(for her family),we have still maintained our friendship. She ¬†is not only a sweet friend and sister in Christ to me,she has also been my mentor in early years as i was seeking Christ and conduit to build relationship in then new church.I still ask her advice and benefit from her knowledge.She personifies¬†love for our Savior Jesus Christ. Rebekah has been missionary in couple of Latin American countries and most recently to Peru,home to Machu – Picchu in the stretch of Andes mountain with her family. Did you just say “What?”No i did not made up the name..Let me introduce you to this wonderful vegetable called ‘Yucca’.You must have bypassed it several times.It is hanging out right by its tuberous buddies, potatoes, sweet¬†potatoes.If you like potatoes,i ask you to give ‘potato’ much deserved break sometime and take ¬†buttery ‘yucca’ for a ride in your pot and pans.If you ¬†still do not know what I am talking about,i give you a hint,it is closely,yes motherly related,to ‘Tapioca’.
