How was your weekend? Mine looked pretty busy at first but  it slowed it down quite a bit as it unfolded.So much so,that i baked pumpkin goodies once again.You must have guessed by this time that i am on major pumpkin kick..and latest addition in list is pumpkin molasses cookies. My thought was to bake simple pumpkin cookies after muffins, bread, donut holes and brownies , pumpkin rice.But my plan changed after i come across this pumpkin molasses recipe at A whisk and A prayer. My friend has given me some great quality molasses and i had not been able to make use of it as much. Pumpkin cookies without icing is bland for me and icing is just another step i wasn’t in a mood for.And for record,i don’t care for icing as much in general but i like my pumpkin cookies piped in lines with icing 🙂 These pumpkin molasses cookies  were simply rolled in sugar,no icing. So first the name.Since it comes in my mind every time i think of it.Is it DONUT?or DOUGHNUT?Though i am mostly adapted to American English ‘donut’ makes me cringe a little,just a little,dare i say it.I know its short and catchy and all that..but still… Now to the next important part of the story.Do you LIKE doughtnuts?Both of my kids certainly do but me and my hubby..hmmm…its too sweet for us. So when we go out for doughnuts,i order myself doughnut holes while my kids are gorging on  fried dough,rolled in sugar ,sprinkled with rainbow colors. Doughnut holes are basically leftover middle round  part of ‘doughnut ‘,as it is  being holed out in the middle.Fried in hot oil traditionally. I like it simply rolled in cinnamon sugar.So much so,that i baked it.With a twist .I added pumpkin for the fall weather and cardamom for the aroma that i love. I obviously used whole wheat and turbinado sugar.You can use regular AP and white sugar.I would try with coconut sugar next. I added generous amount of cardamom but...

Pumpkin Brownies

Pumpkin Brownies

What is one of your most favorite American dessert? Mine is B.R.O.W.N.I.E 🙂 I like fudgey,bit soft brownie,right out from the oven with coffee.I did exactly that as i watched ‘The Artist’ last night,totally against my plans of sleeping early.For the record,its  a good movie,good silent movie of 21st century :-).I liked it actually more then i thought i would.Now go and watch it,if you haven’t already ! Right now,we are experiencing ‘winter’ in Texas.Yes when sun doesn’t come out  and mercury touches 50F and below,it is cold here.Fall is in the air and i love the rare glimpse of fall color  at the lake near our house.  Meet my fall friend butternut squash.I have seen it hanging along the side of zucchini. I look at them all the time  but don’t buy it.In general,squash and our family  don’t get along very well.Particularly the kind which tend to be sweet naturally. To make this taste situation interesting, i thought,how about if i add pumpkin to mashed butternut squash. Either it will be great or bomb. I have been experimenting with pumpkin lately,produce of the fall.So far my experiments have gone well and no one have complained about eating pumpkin.I also noticed that all my pumpkin preparation thus far have been some sort of sweets, dessert .So,I wanted to add a savory twist to it and what is better then combining it with my most trusted pantry staple, rice. Pumpkin Cardamom Chai Bread

What if pumpkin grew at the foothills of Himalayas in fall?Can you imagine,orange pumpkin heads bobbing out from the leafy tea covered hill? Well,it doesn’t happen but i imagined it anyway,when i came across pumpkin bread infused with tea.East meets West in fall ! I am not a tea drinker.Are you surprised?Growing up,first thing my mom did and still does when she wakes up, is to put a kettle of tea for brewing.It is an Indian thing.On few occasion that i do drink tea,i like mine infused with cardamom and ginger.Best tea combination ever if you ask me ! Since i have always preferred my rare occasion tea with cardamom,i profusely added cardamom,one of my most favorite spice to this bread.I should have added ginger too.Oh well for next time experiment.My kitchen was filled with cardamom aroma as it baked slowly for an hour.
