Do you have a favorite vegetable? I have many.One of it is cauliflower.I am thinking of my mom’s ‘Gobhi-Dum’,she makes during festivals.I have not been able to recreate it yet. Yesterday,we were having leftover BBQ roasted chicken for dinner.So i was going to make the fixings for it.I prepared creamed corn.I was thinking to make potato salad which we love. Then i noticed cauliflower head in my refrigerator. I knew precisely why i had bought it. Couple of weeks ago,i saw color of Indian cooking cooking cauliflower in a way,i never thought of.Ever since i wanted to give it a try. I love roasted cauliflower.This one is whole cauliflower head roasted.So instead of potato salad we had roasted cauliflower. This in itself is very filling.Those of you who are on Paleo diet,you can have this instead of rice and potatoes. One of my go-to meal to cook when i really don’t want to spend lot of time in a kitchen is roasted chicken.So  was the case yesterday.I decided to do so in cast iron skillet.Why?Simply because i LOVE the  rustic charm of cast iron skillet ,that’s why of course :-). Roasting a whole bird was intimidating to me in the beginning but it was so easy one pot meal that i had to get it right. I tend to buy whole chicken and cut it in smaller pieces to save few bucks .To the very least,i split the chicken open and freeze it like that.I use the giblet to make stock. I almost always brine chicken,if i can, with salt and water to the very least.It not only moistens the chicken,it also adds flavor.If you are  brining the chicken,you do not want to add as much salt to the seasoning, as you would have otherwise.You can always sprinkle more salt once it is cooked. This past weekend,we had friends over for dinner.So while i was working out the menu,as you could have guessed,chicken made the cut easily.Roasted chicken precisely.My goal was to keep it simple and my plan was to my rely on ‘Mrs Dash’ seasoning mix for marinade base.With this thought i went to bed the night before. Morning came and i rolled I got the chicken out and started putting them in Ziploc.I was on my way to get ‘Mrs Dash’ out and something happened.. I thought,Why don’t i just brine it?So i did for 4 hrs.
