Have you heard the phrase “Cool as a Cucumber‘?  Not sure how this phrase came about but I can tell you that when I think of summer snack,I think of cucumbers. I think of train trips, bus stops and a man carrying basket full of cucumbers and ‘Kakdi“(‘Armenian Cucumber’) in hot Indian summer.On demand, it will be peeled, sliced and served with sprinkle of black salt  to you. I love cucumbers. My papa always bought it during summer. It is an easy, quick snack. I like the crunch and coolness of the cucumbers. Fine Black salt, a condiment, goes very well with it.Try it sometime 🙂 I always look for a way to eat cucumbers. So what will be more perfect then Greek Salad?Greek Salad has tomatoes, onion, cucumbers tossed with feta and dressing. Do you have a favorite salad? I have come to like some.Here is a thing,for my husband,salad without lettuce or green mix is not salad.For me,i will be more then happy to have salad with no lettuce/green mix .You are thinking,then what is left in it? Don’t get me wrong,i have come to adapt lettuce and actually even enjoy it.Olive garden salad and soup anyone? Lettuce was added to my vocabulary after making trip to US grocery market.My first impression of it was ,crunchy breed of cabbage.So i was very puzzled to see it being served in ‘salad’ bar.Needless to say,i stayed away from it as long as i could. So when i came across Panzanella salad,i was willing to try it rightway.Why?It has all the elements of salad minus the lettuce(or it is optional),that i grew up with. Confession time,I don’t like salads…no,let me take it back,i am not a fan of leafy salad…In fact,i was introduced to the leafy salad in the work cafeteria.Needless to say,we never became friends.We wondered about those eating plate ful of salad and seemingly enjoying it while we were having chick fila at cafeteria.We ate spinach regularly but never thought about eating it raw and call it a salad.Lettuce was new to me.It reminded me of crispy cabbage but thought of eating these leafs raw was not even close in horizon.When i tasted it for the first time,i was hardly impressed.I have gotten better but i usually avoid it.All those health gurus,do not hate me please. Salad to me is the way Indians do salad.I have noticed here that salad is eaten ‘before’ the meal not ‘along with’ the meal.We took a forkful of it in throughout the meal.So this is what i tried to recreate at home.Key ingredients in most everyday salad are Onion and tomatoes, drizzled with lemon juice.
