Shrimp and Broccoli

By this time,you must have gotten an idea that we are big on shrimp in our house,next only to chicken.So to break the chicken rut,i wanted to try something different.Since our meat choices are very limited(really 1-may be 2),i decided on shrimp.Quick cook.I noticed broccoli when i was taking the shrimp out. My husband loves shrimp with Broccoli from one of our favourite Chinese restaurant. I think of Broccoli as green cousin of cauliflower.Certainly it took getting used to in my part,we didn’t had them growing up.So i am still partial towards cauliflower. Broccoli,they  serve in restaurant is crunchy,not mushy,which my husband and I don’t mind.But for home,i cooked it little more.Our 3 year old boy is big on Broccoli. Soy sauce is salty,so taste before you add more salt. I do not throw  the Broccoli stem.It has lots of good stuff.I snip the bottom 2 inches,which are hard and use the rest.I added that in fried rice. Shrimp Veracruzana

On our most recent trip to the beach,do you know what i most looked forward to? No,its not sand castles ,beach,waves and body surfing unfortunately,though all of them were certainly lots of fun.I most looked forward to delicious seafood dinner every night with family.And did we eat our heartsful or what.. There is famous joint called ‘Cap n Roy’ which was highly recommended by  friends.We had never eaten  there before,so it was time for us to check that place out.And so we did one of the night.Not sure what is the specialty of that place, i am guessing fish tacos because i noticed lot of people ordering it that time.But i wanted to try something spicy and something with rice.Can’t keep my  Indian saturated palate away from rice for long. Sundried tomato Shrimp Scampi

One of my husband’s favorite thing to eat is shrimp.He prefers shrimp over chicken if we are eating out.Since it cooks so quick,it is perfect for busy weeknight meal.Shrimp is also very light,so i find it great for summer.Frozen shrimp is my freezer staple for all the more reason. So yesterday,when i wanted quick dinner i decided on shrimp scampi.However i love the taste of sun dried tomatoes.It gives such depth to the dish,so i added it to the scampi and so the name !  I prefer olive oil over the butter.Of course,butter will  take this dish to the next level. I used water but white wine would be my favorite choice of liquid to deglaze with.  Do not add water until shrimp is brown,it will prevent it from browning.You need very little water, just enough to scrap up the bits quickly without overcooking the shrimp.Another way to do it is,take the browned shrimp out in a bowl and deglaze the pan then pour the reduced liquid back over the shrimp.I was lazy...
