Guacamole

Guacamole

Can you name some of the snacks from Mexico?  I met Laura, who is from Mexico, couple of days back at a playdate. Won’t you know it that we landed on the fascinating topic of food as we watched our children jump on trampoline or play air hockey? I asked Laura, what she misses the most from Mexico, food wise? She said ‘Empanadas de Cajeta‘(similar to ‘ Khoya Gujhiya’ for my Indian family). She always asks her mom to bring it with her from Mexico.Snack wise,’Guacamole’ with chips or sliced Avocados sprinkled with salt and lime juice is pretty popular too. I quickly identified with Laura’s Empanadas de Cajeta whereas Stacey, who spent her childhood in Brazil, is well familiar with Avocados but not as Guacamole. Brazilians make Avocado smoothie. I had not even heard of Avocados until I got to US.Since it was introduced to me as Guacamole, it is hard for me to imagine in smoothie but I am open to it. We are big fan of avocados in my family. Peanut Butter Candy

Peanut Butter Candy

Couple of morning back,as i walked by my kitchen counter,i noticed freshly opened peanut butter jar.I also noticed the tracks of small finger in  peanut butter. It was time to make peanut butter candy 🙂 Seems like Ugandan children like peanut just as much mine do. Not surprising knowing the fact that groundnut,as what peanut is called in Africa , is popular crop . Uganda has been in our mind for some time .We had the opportunity to watch  mwangaza  children choir on Resurrection Sunday at our church.Stellar performance. My daughter had the opportunity to briefly meet the sweet little girls who were part of this choir afterwards. So as we were making this candy, we were talking about that day. You should must use heaping help from your kids. Its a requirement.Mine had so much fun mixing and mesuring and rolling it into small candy balls.Of course followed by eating 🙂 It is super sweet and chewy. I keep it refrigerated so it stays that way. I used malted milk powder...

Samosa

Samosa

“Mom,why didn’t you pack Samosa in my lunch?” is what my daughter asked me couple of days ago after the school. And i said,”Honey,we didn’t leave any ,we ate it all.” Samosa is one of my most favorite Indian snack and i am so glad my family loves it  too.Particularly my daughter.Potato lover.Yes,she is my daughter 🙂After living here for decade,i had prepared homemade samosa only twice until now. That too when my sister visited and she prepared them.So you would ask, what took me so long to make samosa? It is little bit of work and i am lazy would be the simple answer.I am getting better about it.I have tasted samosa here couple of times,in fact everytime i am having Indian buffet,i have samosa in my plate.Though i like what i have eaten here but i can not simply put them even close to the category of what i have tasted back in India. In fact,i am bias to say that the great samosa are not even available everywhere in India.I have...
