Apple Chips

Since our girl has started kinder,i have been in a lookout for healthy snacks.She is awfully hungry after the school.Don’t  mistake me, i do send her with good lunch but just the long school day is good enough to make one hungry.I do not want to feed her empty calories ,though i certainly do that at times.Couple of weeks back we tried sweet potato chips.I was highly skeptical if they will like it.I was proven wrong,since they crunched it down. I was talking to my friend Melissa couple of days back and we talked about making apple chips.I can not keep our conversation out of food.Have you noticed?I had not thought about it.So this last Friday we gave it a try.This is what i have to say about it. It shrivels as it dehydrates so it was not very appealing to my 3 year old.I did a mistake to call it ‘chips’ and it does not fit his vision of ‘chips’,so he has not touched it yet but i will try...

Whole Wheat Cheese crackers

Do your kids like gold fish,cheese crackers? Mine do.A LOT ..A LOT ..i might add. So i decided to make it a home,with my kids helping me through the process and we did.We made the dough,rolled it and cut it together.Princess crown,flower,cupcake,heart ,star and paws ,we cut them all.We followed this recipe. Verdict from my kids : Average.They liked it ok  but didn’t care for it as goldfish or other store bought crackers. What do I think about it? It is crispy and much more richer then regular goldfish cracker.Not as crunchy as store bought.It some what reminds me of my mom’s ‘nimki”.You can eat couple of pieces as Indians do with ‘chai’ or coffee in my case. Will I make it again?Yes time to time but not regularly.I might tweak the seasoning. I felt 15-18 mins is too long for such delicate pieces so i baked it for 10-11 mins.You must keep an eye on it as it will burn. Let it rest and crisp up after you...

Whats in the name? Lets go word by word.”Jhal” is a Hindi slang for “Very spicy” and “Mudi” is “puffed rice”.So basically spicy puffed rice.Not ‘chili’ spice necessarily but the blend of spices brought together for your taste bud in one bite. Visual which comes in my mind with ‘Jhal Mudi’ is back in the days,when we played out in the evening on the street with friends in neighborhood.As evening approached,you will hear the voice of a man,who is coming with the cart,yelling out ‘Jhal Mudi’ and ringing the bell.Then you run to your mom and ask if you can buy it.If answer is yes,then you wait for the ‘Jhal Mudi’ man to get close to your home,you tell him, what you want.He will quickly mix bunch of stuff while you watch and salivate.After he is done mixing it,he will fold a paper cone in a snap and pour the ‘Jhal Mudi’ and hand it to you,taking money in return.You walk back to your friends,to rejoin the game where you left,eating it as you walk.Sooooo...

What makes it Indian Rice Crispies? The answer is simple.It uses Indian rice puff instead of traditional Rice crispies and Jaggery(‘Gur‘ in Hindi) instead of marshmallow. Couple of days ago,i went to India store and bought Indian rice puffs.I didn’t know exactly why i was buying it for that time,just that i will figure it out and so i did.I had a plan in place which i didn’t know about until i went to pantry that day and saw jaggery begging me to use it. With ‘Muri‘ and ‘jaggery‘ in my vision,i thought of what we ate growing up every year during popular Indian festival,which happens every year on January 14th-15th,”Makar Sankranti“.Every Indian festival has food associated with it,could you have guessed.?So with this ,it is what we call in Hindi “La-e”,a ball of Indian puffed rice mixed with Jaggery. I call it fake goldfish.Yup,thats what they are but kids don’t care.I wasn’t planning on faking it but what do you do with tons of leftover sandwich bread?We hosted anniversary party for my in-laws and catered the food.BBQ precisely.Obivious choice in summer,in Texas.It came with tons of sandwich bread.More then what we can eat so we had tons of leftover.So what were my options? Toast and make bread crumbs.Use it for topping,breading,dressing etc. Make salad croutons. Make fun croutons which kids can eat as snack.My kids love crunchy,crispy snacks,more so if it made with carbs 🙂 Here is what i did.Mine love goldfish snacks,so i chose to cut using small fish and color it yellow using  Turmeric spice.I had white sandwich bread but you can use bread of your choice.
