My Aunt Rita is a busy woman,working full time in hustling city of Mumbai.So you can imagine,she does not have lots of time to cook and still be able to eat healthy.This is one of her fav side dish.She says,it took her 10 minutes to put it all together including taking snaps,with little prep ahead.I say it is a winner. You can keep your potatoes boiled and cubed ahead of time.Major time saver. If you like cheese,use Indian ‘paneer‘ instead of Potatoes.My favorite substitution. You can also have your spinach blanched ahead of time,though it should not take time in microwave or stove top either.Assuming your spinach is washed and prepped.While you are blanching your spinach,prep the pan for seasoning.
