Chunky Chicken Stew

Chunky Chicken Stew

How is the weather where you live? We are in South Texas. In this month of May,i can not tell you in what season we are in.I don’t know when can i put my warm winter cloths away.My plants are totally confused. It doesn’t know if it should bloom or wait.I check weather forecast everyday .Habit which i didn’t think was possible until i started living here .There is a saying here in Texas, there are four season and in Texas you can get all four in one day.I agree 🙂 Couple of days back,we had stroke of cold front. Those up north can laugh at me but  we don’t need sleet or snow to tell us it is cold.We are ready to snuggle with coffee and a book when mercury touches 50F and wind is whipping with cloud cover. So one such evening,i made chunky chicken stew which is perfect for the chilly day {even if that chill is sandwiched in between 85F days :-)).Would you agree? Stew  was hit before i tasted it.What...

Chicken Potato Stew

Chicken Potato Stew

American English amuses me for its simplicity.I have acquired many and it still amuses me.For example,”Fall”.I didn’t know there is a season call “Fall” until i came here then  i understood what i knew as ‘Autumn’ is :fall: here. Why?because leaves change color and “fall” during this time of year.Quite simple, isn’t it?It has ALWAYS been one of my favorite season (even from the days,we didn’t understood each other.)I LOVE it even though, those who have lived in north, will laugh at me.Its relative,i think. Now let me tell you what i don’t love about fall.Sniffles and Sickness. It persists throughout the season. Some of us here in our loving home are going through that.So yesterday,to give comfort to our scratchy throat,i stewed some chicken with potatoes and it was WELL LIKED ,was asked for additional serving and was insisted to pack in the lunch by our little sweets.I was flabbergasted by this phenomena. It is a BIG deal.Let me tell you why? Our 3 and 5 year olds do not associate food which you can “slurp” with meal. For them,if...

Happy Chicken Stew

Happy Chicken Stew

Here in South Texas, winter has totally different meaning.Yes when temp is in mid 40F- 50F,it is winter. If it is coupled with rain, you can  bet it slows down the life,at least for me.Yes that’s cold here.On such cold and wet evening, spooning the steaming hot ‘chili’  along with cornbread brings the warmth.Slowly cooked beef with spices, all well mingled together, served with cornbread ,is traditional fare .I customized it to fit our taste. So I settled on chicken stew. I was gonna name it just the ‘Chicken Stew’ but I changed my mind after the dinner. Both of my kids, almost 3 and 5 couldn’t get enough of it.Yes it was the first time miracle at the dinner table that they asked the number of serving for something which I totally didn’t expect to.Especially my daughter. It is spicy chicken stew without heat, which certainly won’t be qualified as kids favored meal but I guess both of mine have developed palate for spices.
