Every summer we make plans to go to the beach.And every time we go,we make sure to eat at the local seafood restaurant.This year was no different.We looked forward to eating at the seafood restaurant,some which we knew of and some which were friends recommended.
My order almost never changes unless menu changes.It is almost always blackened Catfish,Red Snapper,Grouper,Tilapia or Trout ,one of those recognizable,not big,not smelly white fish,which is in the menu.Also what doesn’t change is the one consistent side dish it is served with among others.Vegetable medley of Zucchini,Carrots with Onion and Bell Pepper.Sometime it will have big head of broccoli which in all seriousness,i do not think belongs there.I do like Broccoli but not the way i have been served in these dishes.Medley’s texture varies by restaurant.Some cut their veggies long and narrow,not thin and some are just chunky(meant to be left out).All are mildly sauted and lightly seasoned with salt and pepper.
So at home,if i am making fish,i try to replicate the experience with the added punchline ,”Remember,how you love the vegetable medley which comes with the order of blackened fish.” I do not know how it is prepared in the restaurents but mine is awfully simple.
- I slice my veggies narrow and thin that it melts in mouth.I cook it little longer and spice it little more then salt and pepper.
- I add a pinch of Turmeric powder,which not only gives it a perky yellow color,it is rich in antioxidants and anti-inflammatory.Spice to keep.
