December is a birthday month in our family.Every week there is one birthday.The biggest one is Jesus’s birthday,of course ­čÖé

Second to that,we celebrated my sweet hubby’s birthday past week :-).It is very hard to surprise my husband.Only way i can successfully (for the most part)surprise him is by serving the food,he has not anticipated.So this time,kids and geared up for ┬áthe big day.My son picked up “Avenger” plate to serve┬áwhereas┬ámy daughter couldn’t look past the princess.They picked up a gift and gotta birthday card for daddy ­čÖé

So,next big thing was the cake.I was mulling over the posts and internet to see what kind of cake i would make.In the midst of that,i asked him,(yes,i told him,i have hard time surprising him),so what kind of cake he would like?He answered,”Chocolate Cake,the old, traditional,BORING kind :-),which knowing him,somewhat translated into

  • No nuts,certainly not when you can not avoid biting on it.
  • No Coffee though we love the drink ┬ábut smell of coffee from cake is big NO-NO
  • Coconut or any fuzzy things at best must be avoided.
So there,my pinterest ideas ┬áburnt and crashed ­čÖé

Now,you see my dilemma.Most chocolate cake add coffee for richer flavor.Since i had never made┬áchocolate┬ácake from scratch,i don’t wanted to take the chance with coffee on his birthday.My original plan was to make German Chocolate Cake but i had to give up on that since nuts and coconut were no-no.

So i finally settled on whole wheat chocolate cake with chocolate frosting from heavenly homemakers.I must say,it was anything but boring.It was delectable and dare i say,we ate it all day long,next day slice by slice.

Whole Wheat Chocolate Cake

Ingredients

    Dry Ingredients
  1. 2 cups whole wheat White flour
  2. 1 1/3 cups Coconut Sugar
  3. 1/3 cup cocoa powder(Dutch Processed)
  4. 1 teaspoon baking powder
  5. 1/2 teaspoon baking soda
  6. Wet Ingredients
  7. 3 eggs
  8. 1/3 cup melted butter
  9. 1 1/3 cups buttermilk
  10. Chocolate Frosting
  11. 1/2 cup butter
  12. 1/3 cup water
  13. 1/2 teaspoon vanilla extract
  14. 1/3 cup cocoa powder
  15. 4 cups of powdered sugar (I used white powder sugar)

Instructions

  1. Preheat oven to 350F.
  2. In a bowl,mix all the dry ingredients.
  3. In a separate bowl,mix the wet ingredients using mixer.
  4. Add dry to wet ingredients.
  5. Divide the mixture in two 8" round greased baking pan.
  6. Bake for about 30 mins,until tooth pick inserted in the middle comes out clean.
  7. Let it cool completely.Take the cake out.
  8. Frosting
  9. Melt butter in a saucepan.
  10. Add water to the butter and bring it to a boil.
  11. Pour the boiling butter/water into a bowl with the cocoa and powdered sugar.
  12. Add vanilla and mix with beaters until thoroughly combined.
  13. Assembling
  14. Get the first cake out on a a big plate.
  15. Spread the layer of chocolate frosting on the top of first cake.
  16. Set the second cake on the top of it.
  17. Add more frosting on the top and side of it.
  18. Let it all set for 15 mins.
  19. Enjoy.
