Whole Wheat Focaccia

Yesterday we tried a new Italian restaurant in town after the church.As soon as we arrived,we were served bread with herb dipping oil.I absolutely love this welcome treat at some of the Italian restaurants.I can totally just eat bread and nothing else.

So this afternoon,I was in a mood for bread baking.I decided on Focaccia,here is why?

  • Its  EASY,very important point.
  • I was going to make it using whole wheat flour .My past experiences with whole wheat bread baking have not exactly been tremendous success. Focaccia is a flat ,chewy bread.So it was a good candidate for whole wheat,which tends to make bread dense anyway.
  • I was pleasantly surprised with the result.Both of my kids loved it and asked to pack it for next morning lunch 🙂

I adapted this recipe and kept it simple .

Whole Wheat Focaccia

Ingredients

    Dissolve
  1. 2-1/4 teaspoon Active Dry Yeast(1 package)
  2. 1/4 cup + 3/4 cup lukewarm water
  3. 1 teaspoon honey
  4. Dry Ingredients
  5. 2-1/2 cups Whole Wheat White flour
  6. 1 teaspoon salt
  7. 1 teaspoon dried rosemary
  8. 1/4 cup grapeseed oil
  9. 2 Teaspoon Fresh Rosemary chopped
  10. 1 Teaspoon Dry Thyme
  11. Topping
  12. 3 Tablespoon Olive oil
  13. 1 teaspoon Mediterranean seasoning
  14. Black pepper

Instructions

  1. In a stand mixer,dissolve yeast in 1/4 cup warm water and honey,until is blooms and becomes frothy.About 5 minutes.
  2. Mix all the dry ingredients in a bowl while yeast is blooming.
  3. Add flour mix slowly to stand mixer.Add rest of the warm water slowly.
  4. Keep mixing it until dough does not stick to the wall of stand mixer.About 6-8 minutes.
  5. Put the dough in a bowl.
  6. Let it rise covered in warm place of the house,until it doubles,about 1 hour.
  7. After an hour,lightly oil the 9 * 13 inch cookie sheet.
  8. Stretch the dough in cookie sheet and let it rise until it doubles,about 45 minutes.
  9. Preheat oven to 400F.
  10. Brush the topping mixture at the top of the risen dough,second time.
  11. Bake it until edges are brown,around 15-18 minutes.
  12. Enjoy it with herb dipping oil or just as it is.
